I have been purchasing Virgin Coconut Oil and Coconut Cream Concentrate from Tropical Traditions for a while and they just started carrying Coconut Flour. I discovered I have a gluten alergy before trying to go raw, so I got the Coconut Flour to try. Does anyone have any raw recipes using Coconut Flour? I think I may want to try an experiment with some Pumpkin Scones for the holidays. :rolleyes:

This is my first experiment with Coconut Flour. They are actually VERY good! Coconut flour is great for cookies. It is very fine and has a sweet coconut flavor and adds lots of fiber.

1 c. macadamia nuts chopped in food processor
2 c. pumpkin (I used canned because it was what I had, but I think pureed carrots would work too)
2 c. coconut flour
2 tsp. pumpkin pie spice
1/2 c. coconut flakes
1 1/2 cup apple juice
1 dropper liquid vanilla stevia (or sweetent to taste)

I mixed all of this in the food processor until it looked like cookie dough. Then I formed scones about 1/2 thick and popped them in the dehydrator.

How do they make the flour? Do you think they just grind dehydrated coconut???? It sounds interesting...I have a gluten intolerance too and got SOOOOOO sick of reading labels I became raw!!! so much easier and I feel like a new woman! Good luck....keep the recipes coming! :)

They make the flour from the coconut pulp once they make Virgin Coconut Oil. They dry the pulp and grind it to flour. This is the link to their website:

I created a natural skin cream which I am in the process of patenting. I get Organic Virgin Coconut Oil from this site to make my cream. They have lots of great products.
