Does anyone know much about this? I have researched it a bit and it sounds like great stuff - zero on the glycemic index, good for diabetics, good minerals, etc. It sounds like it is raw, depending on the manufacturer. I haven't found it in many places besides Natural Zing.
Any experiences or thoughts?

I saw raw yacon syrup in the raw section of my grocery store today (a VERY special grocery store, indeed). I wondered about it too! Would love to know.

I like yacon syrup. It's best as a substitute for maple syrup. It has a light molasses flavor, but it is darker and richer than agave, which is lighter tasting.
I'd use agave as a honey substitute, a corn syrup substitute or otherwise light or white sugar substitute. I'd use the Yacon to substitute for brown sugar, maple, or light molasses.

I don't know the brand name. However the store I shop at is Rainbow Grocery in San Francisco. It is an amazing, huge store that carries no meat. It has a fantastic organic produce department and almost every raw item you could want. I love it!
