Thanks to everyone for their wonderful advice about staying the path... I incoporated your advice tonight. Tonight I made my dinner first, took care to attend to presentation... and voila... this is what I came up with...
Sandwich made of avocado, sprouts, baby spinach, sliced tomatoes, basil aioli, and olive bread
Salad made with mixed lettuce, veggies marinated in sun-fired vinaigrette (veggies include: olives, zucchini, red bell pepper, pinenuts)
HEHE I am so excited. It was way beyond delicious.

Okay girl - share the olive bread - it really looks good. I also like the sunfried veggies - okay how you do it. And you had worries?

I'm on my way Flutterfly...
I will post the recipes for the bread, aioli and sun-fired vinaigrette tonight when I get home. For those of you that might have the book, the olive bread is actually called "Counselor's Bread" and it is in the Living Cuisine Recipe book by Renee Loux Underkoffler.
The aioli I used on the sandwich is also in the Living Cuisine Recipe book that is paired with the steamed artichoke recipe.
The Sun fired veggies is simple... I used the Sun-Fired Vinaigrette recipe from the Living Cuisine Recipe Book. I used diced zucchini, olives, diced red bell pepper, diced avocado and pine nuts. Tossed the veggie with the vinaigrette and was on my way. Makes a delicious sandwich filler, by iteself, or on top of salad greens.

Oh wow. That is beyond delicious looking. I can't wait for the recipes since I don't have that book. I'm going broke buying raw uncooking books! Thanks, in advance, for sharing the recipes with us.

That settles it..I must by that book when I have the mula.
Looking forward to the recipes. The sun-fire veggies and that
bread look - well all of it looks incredable. Raw spa food.
