they are REALLY easy if you have a food processor (i have a small one that does the trick)
raw GAZPACHO (a tomato-based soup served cold-- i swear this recipe is just like what i had in spain!)
7 plum tomatoes
1 green onion
1/2 cucumber (or more if you are a cuke freak like me)
1/2 yellow pepper
1 clove garlic minced small (optional)
handful cilantro
tiny bit of cold pressed OO (optional)
pinch of sea salt (optional)
juice of 2 lemons or limes
1/2-1 avocado (depends on taste and how hungry you are :)
puree the tomatoes and finely chop the other veggies (not avocado) and mix. add oil and seasonings to taste. last, cut avo into desired size chunks and mix it in. garnish with cilantro if you are feeling fancy! keeps a couple of days in the refrigerator and the flavors mix nicely.
raw TABOULI- i'm not giving amounts here. some people like more grain, i prefer more parsley and stuff in mine.... experiment and have fun!
desired amount wheat berries (or any other grain you would like to soak or sprout. i've also thought about making it with flax but i think that might be scary.)

large handful parsley, chopped (i use the food processor)
green onion, chopped fine (1 should do it)
smidge of garlic, minced

1/4 tsp cumin (if you are spice inclined)
juice of 2 lemons (or more or less)
soak or sprout the grain you are using until it is ready to eat. i use wheat berries soaked for a couple of days and change the water in between, then drain when done. mix all in a big bowl, and add cold pressed OO to taste (i use about 1/2 tsp). it's good right away but better if you let it sit in the fridge for a few hours :)
