View Full Version : Flax Cake!

I made this recipe up and it was soooooo good! Unfortunately I don't have measurements but you can use your own judgement. Here are the ingredients:

Flax meal (blend seeds in coffee grinder) This is the flour base.
Dates
Raisins
Coconut oil (about 1 or 2 tbs)
Cinnammon
Small handful of pecans or almonds (or a little of both)

Blend this up and add a little water to get it to a good consistency.
Pat down in a pan and put in the fridge.
This is really delicous and healthy!

:D I love cake and right now i don't have a lot of ingredients to pick from but thanks to your cake recipe i can have my cake and eat it too :D :D .

Does this dry up or will it be a wet cake.
How thick did you leave it.

Did you soak or not soak the seeds, nuts, and fruits?

This got hard in the fridge (because of the coconut oil) and it was easy to cut. I guess it all depends on how much water you add.

I did not soak anything only because I was hungry and didn't want to wait but I do recommend soaking the nuts and dried fruit to rehydrate them.

Watch out, the cake is very addicting!

I am soooo trying this. I hope I can come close to some kind of measurements. We'll see. If mine turns out good, I'll post my measurements for ya'll. Hoping that mine turns out similar to vgloveforlife's recipe!!
