I haven't tried this recipe yet, stumbled upon it and the only source for it I can find is "Best in the World II" which I assume is a cookbook? Anyway, if anyone tries it please let us know how you like it! I don't have any butterscotch extract (I believe there is a brand that qualifies as raw for flavorings??).

Butterscotch Mousse

Serves 6
Sweetened with nutrient-rich dates rather than sugar, this creamy dessert makes a healthy finish to a meal.

1 cup cashews, raw
1 cup dates, soft pitted, packed measure
1 cup water
1/8 teaspoon nutmeg
1/2 teaspoon cinnamon
1/2 teaspoon butterscotch extract
6 kiwis, sliced

In a food processor, grind the cashews approximately 2 minutes until they are the consistency of ground meal. Add the dates and process 1 minute or until you reach a pasty consistency. Gradually add the water and blend until smooth and creamy. Add the nutmeg, cinnamon, and butterscotch extract and process a couple more seconds until completely blended. Serve in chilled glasses layered with slices of kiwi.

OMG that sounds sooooo yummy...im going to see if i can find butterscotch extract tomorrow!!! let u all know how it turns out

Dorky me goes and soaks the cashews ahead of the time for a creamy result, then I read the directions afterward! I guess I just figured all mousse and puddings are made in the blender!

I special ordered from a co-op, but they also sell it online, at the Frontier site. You may consider buying the butter extract at the same time - to use in the parsnip mashed potatoes (I don't have the recipe but it was discussed here in one of the other threads).

i get my frontier extracts at our health food store. they also have natural maple flavor! didn't have time to make the mousse last night, so i am making it today. i'll let you know how it goes...

I'll check out our local Central Market today, I'm hoping to find Frontier and stock up on all sorts of wonderful flavors!

I did make the mousse this morning (minus the butterscotch extract of course!) and it is delicious so I can only imagine with the extract how much better it will be.

Yes, as anyone else makes it please do report back to us!

So I did find Frontier brand extracts at Central Market but they don't carry the butterscotch or butter! Oh well, I'll just order them online. They did have vanilla, cinnamon, orange, strawberry, mint, and a few others. I didn't buy any, not knowing what else I'd use them for.

I'll eat the mousse plain, it still tastes really good and I think would be great as a topping over some banana ice cream.

oh my gosh i love this mousse! i have a sweet tooth so as long as i can make raw sweets it is much easier fo me to stay on track. thanks for the recipe!
