:D I saw the picture of your raw dessert, the coconut-lime creme tarts, it's very colorfu. and yummy looking, great job.
I have some limes and coconut from the leftovers from making the milk so would you please share your recipe with us?
I'm sitting here looking forward to having this for dessert. If you can find the time i really would appreciate it, thanks so much.

Hi Bethanie, Of course!
The inspiration for the recipe was from the book, Raw Food Real World, although i modified the recipe alot. The recipe made way more than I needed, so you can scale these down if you want as well.
And the tarts can be eaten as they are, or frozen for longer (the creme tastes like ice cream =).

Tart crust:
2 cups almond flour (store bought)
2 tablespoons date paste (I soaked organic dates for about 30 min then pureed them with some of the sweetened water)
1/3 cup flax seed
1/3 cup coconut milk

Coconut-Lime creme:
1 avocado (can use 2 for greener creme color)
2 tablespoons lime juice (can add in rind peelings)
3/4 cup raw cashews soaked
1 cup coconut meat
1/3 cup hazelnuts soaked (optional)
1/2 cup coconut milk
2 teaspoons vanilla extract
1 packet stevia and agave nectar to taste
pinch of sea salt

mix the crust ingredients togethor into a pastry dough and set aside
blend all ingredients for creme until smooth and creamy

using muffin cups press a small teaspoon size of dough into a circle and use thumb to indent center to form a 'shell' (can dehydrate if desired)
drop teaspoon of creme in center
garnish with flaked coconut
freeze for about 30 min before serving (if desire a more ice-cream like consistency)

Hint -- if you want to stay raw, you can order real vanilla beans online and use the little "seeds" inside rather than use vanilla extract.

Also, there is raw coconut flakes available, too.
