Does anyone have a recipe for "steamed veggies" that can be made in a dehydrator?

Not an exact recipe, but I usually just take the veggies of choice, lightly toss in olive oil and then place either into a partially opened ziploc bag or in a bowl or sometimes just right on the tray and dehydrate for about an hour or until the desired texture.

You don't have to use oil, you can rinse them and then just put them in there as is...but I prefer a little light oil. You can also season them as you please...IF you please.

Yes, I agree with Rawkinlocs, I've tossed some chopped veggies in a marinade/dressing (could be oil or vinegar or fruit acid based, or whatever kind of raw marinade/dressing) in a ziploc bag and they do soften up. The dehydrating is good if you want them warm too. I've made some lettuce wraps this way.
