View Full Version : What to do with all these peppers?

Hi guys,

I've got a bunch of red, yellow and orange peppers for cheap as they were getting slightly tired.

Any suggestion as what I could do with them?

Stuffed Red Peppers

Filling

1 cup cashews
1/2 pint cherry tomatoes, or same ammount of any fresh tomatoes
1 stick of celery
1/2 tsp. each of cayenne powder, paprika, basil, oregano, and garlic.
1/2 small onion (chopped)
2 tbs. lemon juice
1 tbs. olive oil
Sea salt to taste
How to: Put all the filling ingredients into a food processor and process till smooth. It will thicken more as it sits.

Assembly: Spoon 2 tbs. of the filling into each pepper half and garnish with a parsley leaf.

If you want it can be heated in the dehydrator. Don't really know where this came from. It appears to be one that I changed from something else to suit myself.

Another one of unknown origin:

Bell Pepper Crackers

1 whole red bell pepper
¼ c cashews
¼ c ground flax seed
Salt to taste
Spices to taste
1 T of nutritional yeast flakes
liquid if needed
Blend till smooth. Pour onto a teflex and dehydrate, flip over onto the mesh sheet and continue to dehydrate until no longer not moist and a bit crispy.

Use these like bread, or a tortilla. If made thick enough, it can be be a scooper! Great and cheesy, almost cheddar.

This one may have actually come from here somewhere.

Jade Cafe here in LA includes dehydrated strips of bell peppers in their herbed flax crackers. They're a nice, sweet counterpoint to the crackers. They also use dehydrated strips of red bells to garnish/enhance their rawvioli. Yummy.

Mmmmmmmm! Sounds delish! Actually, you're reminding me of that awesome cheese recipe that I associate with you. Let me see...Oh yeah, there it is:

Doe’s Cheddar Cheese¨

Blend until creamy:

1 large red bell pepper
¼ c water
1 c raw cashews
1 T tahini
3 T nutritional yeast
1 ½ tsp. sea salt
1 T minced onion
1 clove garlic
2 T lemon juice

You could convert this to a nacho cheese type by adding some jalapeno to taste.

Variation: add 1 cup MORE cashews, another tsp. of sea salt, and about 1 T of olive oil. Wow oh Wow! The result was much thicker and more "cheesy." If you haven't already, you really should try this!

Chili huh? I was thinking of making chili in the coming days. Would you mind sharing the recipe or post the ingredients? I'm not too familiar with "Mexican" food but it sure sound like it would be great to warm up our insides as we are slowly getting buried under snow here... (I'm not complaining! It's so, so beautiful!)

Thanks for the tip! Pepper strips would be perfect if I find I won't be able to use them all before they start going on me.

How about dicing and freezing?

Or, dice and mix with corn, cucumber, parsley or cilantro, lime, red onion and garlic for a nice relish?

Or, make fake lips out of them? :D (that's always my favorite!)

i like to use the red or green pepper on salad, it is really tastly! :p
however, different people, different tastes.

I once saw a recipe for cream of red pepper soup. Can't find it at the moment. However, it really sounds good right now. Since I don't have it saved to my computer maybe it was in Alissa's book. Anyone know?

Here's a Cream or Red Pepper I found, although not from this board:

RawGuru’s Cream of Red Bell Pepper Soup

6 red bell peppers (seeded, chopped)
3 sticks of celery (chopped)
1 carrot (chopped)
3 tsp. fresh ginger
1-2 tbs. lemon juice
3 tbs. fresh basil
1/2 bunch of fresh herbs, parsley, cilantro, etc.
1/2 tsp. cayenne
1 young coconut (meat and water)
3 ripe avocados (chopped)
1 ts. olive oil
water or celery juice, or cucumber juice to thin out the soup
celtic sea salt to taste

Put everything in a high speed blender and blend till smooth or leave chunky. Garnish with sprouts and/or lemon zest.


Where we live however, there's hardly ever any young coconut available. Sigh...

When I banana searched red pepper, it came up with a mention of a Red Pepper and Tarragon pasta sauce which sounds great but, unfortunately, no recipe though. Does anyone have this by any chance?

If you have more then you can handle at one time, they freeze well and then its great to add to recipes. I like to put them in Alissa's Marinara Sauce. YUMMY!

I've been meaning to make this much praised recipe but didn't realize it called for peppers! Perfecto!

I shall make it tomorrow as I already have some chili flax crackers made. Can't wait!!! :D

I make a really simple red pepper soup.

Blend some red pepper (2 per person) in the vitamix untill really, really smooth, it must be smooth otherwise it will not taste good.

Garnish with avocados, cucumber or any other veggies.

You could actually eat them on their own and make a meal out of them. Since they are sweet, they are very satisfying.

I actually made this one up myself while experimenting with my Vitamix. Fred P. may have a recipe like this too.
