Summer Tomato Basil Soup
Can be used as a Soup or Dressing
Wait until summer, when you can buy or grow juicy ripe organic
tomatoes for this soup. For a thick and hearty soup, instead of
juicing the tomatoes, just toss them in the blender until you have
a three cup yield.
3 cups freshly made tomato juice
1/4 lemon, peeled and seeded
1 avocado
large handful of sunflower or buckwheat sprouts
2 tablespoons chopped basil
optional: 1 tablespoon chopped onion
optional: 1/2 garlic clove, chopped
In a blender, blend all ingredients. Top with sprouts and basil
flowers. Serves 2.
For Dressing: use the optional onion and garlic with a bit of olive
oil, flax oil or hemp oil added in.
