Hi,

I have a problem, I am making a gravy recipe that calls for 1/4 cup chickpea Miso and I don't have any - nor does the healthfood store - what could I use to substite?

This is for Thanksgiving and I need the gravy :(

Thanks,

Charlotte

Miss Marie, I would like to help you. Usually when making a recipe that calls for any kind of miso I simply leave it out and do nothing else at all. You may want to add some sea salt or nama shoyu if the gravy needs more taste. Or add marinated mushrooms and blend. If the gravy is too thin some soaked cashews added and blended would help, or 2 or 3 T of any raw nut butter you may have. Having never seen miso that's about all I can say. Maybe someone with experience using miso will see this and say more.

If it were my gravy I'd go with the marinated portabella.

Hope this helps some,
Teri S

Thank you so much Doe!

I have never seen Miso either - but I was worried about the bulk since it is a whole 1/4 cup instead of a tablespoon.

Ok, so I am just going to taste it without anything added then go from there - I have salt, and i have almond butter, I also have nama shoyu.

Thanks again,

Charlotte

Yes, I use Nama Shoyu. I tried adding portobello mushrooms last time I made gravy and they gave a good brown colour as well as a really "meaty" flavour. I will likely use them often as I love mushrooms.
