Hi Diana Cda... On the Sad to Raw Site... there is a recipe for eggplant pizza. There are also lasagne recipes, ravioli, parmesan cheese. Maybe from those ideas you can create an eggplant parmesan.

Thanks but what is stumping me is how to make the coating stick. I'm sure practically any ground up nut would work, but do we use something to make it stick and do we dehydrate or not, and will just marinading work. Since I'm tired of re-inventing the wheel, was hoping to find an existing recipe as someone, somewhere surely has come up with this an has posted it somewhere on the net.
