Can you eat the leaves off beetroot? What (if anything) do you do with them?

Yes, although I prefer them when they are very young with very little root on them yet. They're more tender then. Many people cook them but obviously not an option here. They can be chopped or torn and added to salads. Not sure if you could put them in a smoothie or not. I'm not a smoothie person.

I've juiced them. Not added to smoothies yet but just because I've not purchased beets in awhile.

SALADS!!! BEET LEAVES ARE AMAZING!!!

Salads, juicing... anything you would use spinach or lettuce for. Ohhhhhhh when my garden was at its peak, I would eat beets and beet leaves all day.

This is a coincidence: A friend was JUST yesterday asking me the same question. She is not raw so I did tell her that she could just cook it by itself as a green, or put it into soup, but mainly to use it in salads. She acted like it was a totally new concept to put anything besides iceberg lettuce into a salad. Well, the good news is that she did shred some into salad and really liked it. She was going to do it again for supper and see how her husband liked it.
I have used it in my smoothies and it goes well. Also Swiss Chard, which is very similar. So...YES to smoothies...YES to salads...YES to pretty much anything that calls for spinach. Raw Spinach/Mushroom Quiche....Raw Spanikopita...Raw Wraps...They can be used in place of grape leaves for Dolmas. And on and on.

Funny how you see names and read comments from people for awhile and you feel just like they are friends. A self-invitation to dinner is a compliment and the prospect would be exciting!

FYI I just noticed on the "pictures" thread a great picture and recipe for "Marinated Greens". I think I will pass that one along to my non-raw friend who wanted to know what to do with the beet leaves.

I am amazed at how much more nutrients are in the greens of the root vegetables than the actually root. I'm gonna add them to my smoothies. Anyone eat these on a regular basis and feel the difference?
