A friend gave me this recipe but I don't have a dehydrator but thought I would post it here for anyone who wants to try it.
1 c dates, chopped
1 c figs, chopped
1 c pecans or walnuts, chopped
2 c ripe bananas, mashed
4 cups raw almond butter
Combine all ingredients and knead well.
Roll doll to 1/4 inch and score into 2 inch squares. Place on solid Teflex sheets and dehydrate on 105 degrees for 4 hours. Remove from solid sheet, turn over and place on mesh sheet and dry for an additional four hours or until bread reaches desired texture.

I just got this recipe in the latest "Back to the Garden" issue from Hallelujah Acres. It sounds wonderful! I plan to try it this week and I'll post the results along with pictures.

I've got a batch in the dehydrator and it smells soooo good! I just made a 1/4 of the recipe so I don't waste ingredients in case I don't like it (but I think I will love it!) and I'll post tonight or tomorrow the results along with pictures. Fun holiday uncooking!
Edit-this has been uncooking now for almost 12 hours and is still very moist. The flavor is wonderful, I just don't know what consistency it is suppose to be. So I will leave it going over night and see what happens!

Glad you asked Linda1970! I finally took it out of the dehydrator this morning so it had a full 24 hours! Still nice and moist but is holding together a bit better than it did last night. It is DELICIOUS! I will post pictures as soon as the camera is downloaded. Although I did score it ahead of time it didn't really end up in nice square pieces but that doesn't affect the flavor at all!
The only modification I made was raisins for the figs since I didn't have figs and I love it with the sweet raisin flavor. This is like a dessert bread or cookie, I suppose it could easily have been rolled and then flattened into cookies too.
I'll be back with pictures! And this recipe is a keeper for sure, especially for the holidays. And IMO it is MUCH MUCH better than the traditional fruit cake ever was and I'd think most SAD eaters would like it better too!

Here are the results! The first picture is the "before" uncooking and you can see how nice and moist the mixture is. The second is of course the "after" picture, I did score it but it didn't cooperate with me! Ha! Tastes just as good though, I am storing it in the freezer for snacks. Do let me know if you try it or have any new variations of it too!

I have never liked SAD fruitcake. Really can't stand it. It's not like SAD fruitcake though, right?

Wow! That looks delish!
Do you think I could replace some of the almond butter with almond pulp and a little coconut oil? I find the store-bought almond butter to be so expensive (not to mention it usually isn't truly raw...) and haven't got the right equipment yet to make my own.

Carmella, almond butter is sooo expensive here too. Especially the "raw" variety when I can even find it. I'm going to try making some in my VitaMix tomorrow and see how it goes. I really hope it turns out. Your idea of almond pulp and coconut oil is really interesting, I think it would work! It seems to me it would make a similar texture, it would just taste a little different...

Debra-I'm glad you liked the pictures! And it really doesn't taste like the old traditional fruitcake at all. You can vary the dried fruit in it too to change the flavor as desired.
Carmella-I'm sure your changes to the recipe would be just fine. Yes, almond butter sure is expensive! That is why I made such a small batch to try it out first, I have a few jars of almond butter left from my last shopping trip to Trader Joes and then I'll be making my own. I'll try my Champion as I've heard it works really well for nut butters, I hope it really does!

Vitamix works great for nut butters too. It only takes a few minutes to make it.

Thanks for the feedbacks... I will give it a try once I get enough almond pulp (I store it in the freezer until I have enough to dehydrate).
Right now, all I have is a coffee grinder, a Cuisinart Mini-Prep Plus, a not-so-hot 7 cup FP and a Black and Decker blender. Don't think any of these would be up to such a demanding task as making nut butter... Sigh! :( I'd love to hear about your homemade almond butter experiments though so I know what to ask for Christmas! LOL :D

I just made this recipe and although it tastes fantastic, I find it VERY greasy. I think next time I'll substitute something dryer for some of the almond butter such as raw oatmeal or something. I did add a little bit of ground flax to hold it together which is nice...but still too greasy.
This recipe is definetly a keeper though, I just have to find a way to fix the little problem. :)
