I can not seem to find a pesto recipe that i like and i have all this basil just begging to be used!
Help!

Hi jazpie.
I copied this recipe down a while ago but havent made it yet. Sounds good though. Let me know how it is if you try it!!!
Pesto Sauce
1/4 lb. basil, fresh
2/3 cup lemon juice
1 cup pumpkin seeds (soaked organic)
3 cloves garlic, raw
pinch of cayenne
a little filtered water in the blending process.
Mix it up.

Here are two from my book (living on Live Food)
One is really heavy and good for stuffing, the other is good as a side dish.
There are also a couple of more in the book like, Miss Ackerlys Pesto Butter...
Guss Pesto
Hearty, heavy, and intense! I use this for my stuffed mushrooms and as a filling for peppers and tomatoes.
1 cup walnuts
1/2 cup pine nuts
2 cups basil
1/2 cup olive oil
3 cloves garlic
1/2 teaspoon sea salt
Blend all ingredients in a food processor until well blended and smooth.
Pesto Light
With more vegetables and less nuts, this is the light version of the heavy pesto. This pesto is wonderful with fresh vegetables or crackers. It is also used in the Pesto Lasagna and the Pesto Pasta.
1/2 cup pine nuts
1/2 cup fresh cilantro
1/2 cup fresh basil
4-5 cloves garlic
3 Tablespoons Bragg liquid aminos
2 Tablespoons lemon juice
2 cups tomato, chopped
1. Place all ingredients, except for the tomato, in a food processor and blend until blended but still chunky.
2. Add tomato and pulse chop a few seconds until well blended but not soupy.

Hi jazpie,
If you have a lot of extra basil, try just cutting up a bunch and adding it to your salad. Some herbs are overpowering in salads but I find that lots of cut up basil leaves taste wonderful in a salad with a vinaigrette dressing.

Oh my!!!
i jsut made the pesto stuffed mushroom with gus's pesto and it is sooooo good!
WOW! ill have to try some of the other ones soon.
