Anyone have any ideas on what to make with zucchini? I have a bunch of them that needs to be eaten up ASAP. I don't have a spiral cuter to make nice pasta noddles (sniff). Help please!

If you have a veggie peeler, you can peel long strips into fetuccini, and if you want spaghetti or angel hair, simply stack the strips and cut them into thing ribbons.
You can dice them up with carrots, peppers, onions, mushrooms or veggies of choice, marinate for a few minutes in olive oil, nama shoya, and your favorite spices and roll them in a lettuce, collard or cabbage leaf.
You can slice them into very thin rounds with a spiral slicer or mandoline and fill with nut cheese like a ravioli, then top with marinara.
You don't need a spiral slicer. I have one and never use it. Go to a walmart type store and pick up a julienne peeler it will make short strips for pasta. I also make raw hummus out of zucchini, just do a search for the recipe it was posted on here recently.

Just cut up into salad?
Slice in half, scoop out the seeds and stuff?

brush lightly with olive oil, sprinkle with your favorite spices and dehydrate. Yummy!

Blend them into hummous with tahini, lemon, garlic and sea salt.
Use them as a blended filler in raw soups.

Thanks everyone for the suggestions. I like how everyone told me how to mix things with (or marinate) the zuchinni so they don't taste bitter- well I think they taste bitter raw! I look forward to eating something yummy really quick. :o

I often simply slice them in rounds with the skin on and dip (esp. Indian Spinach dip) into or spread pate (like Mock Salmon or Sunny Pate) on them and enjoy.

+1 on the hummus! Soooo good! I think I prefer this to the garbonzo bean kind! :)
