View Full Version : Sour Nut milk and Corn?

Hello I usually like preparing my food a week in advance. Like lettuce washing, spinach etc. Okay I made my Almond nut milk with a little honey and 1tsp lemon juice around 5 days ago. And it went sour, I thought if I used lemon juice it would not go sour. Does anyone know how long does it take for nut milk to go sour? Okay second question. I bought to ears or corn and peeled the cornels, and but it in a tuber wear container also 5 days ago and it went so bad. I took a mouth full from the container it looked allright. But the taste was so bad, I spit it out quick. How long does it take for peeled or shuck corn to go bad in a container? I like to prepare my meals usually one time a week. Any suggestion on how to keep food more fresh. Thanks Mysticalwoman P.S. forgive my bad spelling.

:) Wellll...one thing I know is that adding lemon juice to dairy milk is an old "standby" way of making buttermilk for recipes when you're out of it. I think that the same may hold true even for nutmilk...lemon juice probably caused it to curdle and go sour on ya!

But I used to have a very old fridge that didn't get very cold...in that one my nutmilk would only last 2 days. Since moving, our fridge now gets colder and I've kept it as long as 4-5 days with the lid being on extra tight.

Fresh corn...well, you never really know how long it's been in the store, so I noticed that it doesn't last very long either. But I've never shucked it and cut it from the cob and stored it that way unless I put it in the freezer and of course, it lasts longer in there than the fridge.

One suggestion for your milk though, make it, but make it with about half the water you'd normally use. It should be more like a cream. Pour into ice trays and freeze into cubes. Place those in a ziploc or container and store in the freezer. When you want to make milk, put a few cubes into the blender with some water and blend. Use/make only what you need for the day or a couple of days. You'll want to kinda play around with how many cubes to what amount of water to get your desired consistency.

Big thanks Rawkinlocs.:) I will take your suggestion and start making ice cube milk. So I won't have to waste all my nut milk. What do you put in your nut milk? I did not think about the lemon juices but it did make the nut milk curdle. Yuck

Mystical Woman, I prepared my food one week in advance when I cooked SAD. I have found with RAW that most foods don't keep and especially greens - most only keep 1 or 2 days and then they taste bad. I am in Phoenix area also and the heat does affect the temperature in the fridge. Also with corn - I have not been able to get good corn in years. My dogs love corn and they will not eat it. Only if I go to farmer market but I cannot because they want to sell me a huge amount and I cannot eat that much. I have not made nut milk so cannot help with that.

Nut milk.... yes, only good 3 days max and it's pushing it on the third day. Hadn't tried the freezing trick though... sounds like a winner!

I make my nutmilk with half almonds and cashews, a little vanilla extract, a little sea salt and agave nectar...and of course, water. I don't care for the flavor of straight almond and straight cashew is too rich for my tastes...but the two blended together is delicious!

Oh, and those cubes can also be used in shakes and ice cream!

Hi luckitri I know what you mean by the heat here. I live in Tucson, and I know Phoenix gets alot hotter. What I hate is trying to get the greens home before they start wilting.
