Is there anything that can substitute pine nuts. Where I live, they are VERY VERY expensive. Over 3.00$ oer 100grams. I went to buy probably about 3-4 cups of pine nuts and they cost 20$. is there another nut that is equally as good for some of the recipes?? I just find the expensive nuts are the ones that are called for the most.

I suppose it would depend somewhat on the recipes you are considering making. You could try substituting soaked almonds or cashews for the majority of the nuts called for, and only use say 1/4 cup pignoli. Or try a mixture with sunflower seeds which are super cheap most places?

I find pignoli have quite a pronounced flavour, so I would think you could get away with using much less than called for and still have the intended flavour and taste.

Good luck. I know where I shop they are at least $3-4 per 100g too. It's crazy expensive! I bought a bag of 'raw' organic cashews the other day that came to $13 and I nearly fainted. I cannot IMAGINE $20!! :eek: (That said, I probably wouldn't have blinked once back in my carnivorous days to pay $13-$20 on a prime piece of wild salmon or something :rolleyes: )

I usu substitute sunflower seeds, they are almost as good.
