Ok I know walnuts and pecans are raw I have searched for raw cashews and can't seem to find any. So are they like walnuts and pecans raw no matter what???

Hi,
Well, I heard that cashews aren't raw because they are toxic in the "apple", that is what it is called, and then they have to emmerse it in boiling water to loosen it, then they have to remove the dark brown outer coating, so the cashew nut isn't raw.
I buy cashews that saw "raw" on them at the health food store in my area, they taste entirely different than the roasted ones, you wouldn't even know they were the same thing.
They are very white, fall apart easily, and turn to mush really quickly when soaked, so they make great raw cheese, and raw cream cheese etc. they are very smooth and creamy.
So, I have heard the raw and unraw thing, and I just buy the ones that say raw, and go from there.

I can't seem to find ANY that say raw. I went to whole foods, trader joes and 1 health food store. There is one more healthfood store I know of close buy I am gonna check them out today.

They are not raw when you buy them in stores typically. I would try buying them online from a trusted raw food web site like rawfood.com. Cashews are typically very hard to open so in order to do that store bought nuts are usually extracted at a temperature above 118 degrees.
