View Full Version : Low calorie-Lasagna, Eggplant Parmesan?

Wanted--dead or alive. Wanted to die for! Kidding alive! Think holidays, think fat, think raw, but how about low calorie too.

Maybe asking the impossible, but I love raw lasagna, but with the cheese filling it's not so low cal. Yes, control my "eyes" desire and "mouth" input would be great, but it's Lasagna or Eggplant Parmesan. Anyone have a low calorie version or both this and Eggplant Parmesan? Patiently waiting. Got plenty of zucchini from my garden hanging out. Yes, tomatoes too. Thanks.

Maybe just make it with a light oil-free tomato dressing, and some ground oat groats for the topping. You can thinly slice zucchini, eggplant and portobella mushrooms and marinate them in a light italian herb infused vinagrette first.

If you want a lighter fat, try a little mashed avocado.

I stopped making all those lasagnas myself because they are too heavy for me.

I don't know if there ever such a thing Sharon for substitute for "cheese" flavor. Watching Oprah yesterday, seeing the Best Pizza's around, were enough to almost drive me straight back to NY or check for the NY one local. I didn't take that temptation serious enough. Thanks.

Doesn't Alissa have both in her book? I can't eat them - too heavy and dairy-like. I need to eat lighter foods.

Thinkly slice, soak in salted water for a couple of hours, then full dehydrate the eggplant. Then layer with your favourite nut cheese, tomato sauce and other chopped veggies as desired. You will love it!! Dried eggplant soaks up liquid really fast and is nice and soft.

I'm going to try this!

I was having a flashback of the best pizza parlor I ever went to in NY: Danny's in Kew Gardens, Queens, NY. No rides to pizza stores here. Produce prices are fabulous at Sunflower Market, Denver, for Sharon reading this post. Email private Sharon for info. I must say I have made some great raw pizza's too even without the raw cheese.
