I got one of these today in my organic produce box but I have clue what to do with it. I remember hearing two guys discussing it once in a grocery store. One of them said it was a good sub for mashed potatoes because it tasted like potatoes but with less carbs and calories. I didn't try it at the time though so I don't know. I assume you'd have to cook it in some way to do that though.
I generally prefer eating my raw veggies plain with no dressings and such. Can this just be cut up in some way to be eaten? Can I eat the green parts? Or just the white? Does it need to be peeled? I feel rather stupid at age 47 for not knowing what to do with this veggie.

Hi,
Just peel, cut into chunks or shred it and your good to go. I know you are not crazy about fruit but goes good with apple.

My likes: You can make permanent expemptions for three things you'd never want to see in the box. For me, one would be avocado.
I also like that you can choose the size of box that you want.
You can add additional items.
They also have a few non-produce items.
The produce is sometimes unusual varieties that I haven't seen elsewhere.
They notify you each week as to what will be in the box the upcoming week and you have a few days to either cancel the order, make up to three changes or add things to the order.
My dislikes:
I've occasionally had damages things or stuff past its prime.
They don't always get the order right. A few times I got things I didn't want or something similar to what I ordered, but not quite.
You can't get an all veggie box. I usually wind up throwing out some or all of the fruit because we just don't eat it.
Often what's in the box is what I already have in my garden.
I hadn't noticed it but someone I know complained that pineapple and bananas were never offered. But perhaps that's because they're not available locally. Mostly they put in stuff that is only local. However, after the complaint was made known, they then began offering these as add ons.
I do not believe they will deliver to your doorstep. Rather you use a drop point. Mine is the health food store around the corner from me. No biggie since it's right next door to my daughter's dance studio and I'm there all the time anyway.

Likes: Product always fresh.
Could choose and all veg. or all fruit box.
Would deliver to your door, although I never did that. I used the health food store as a drop point.
Forced us to try new things because we had no choice but to take what was in the box.
Dislikes: Rarely knew in advance what I'd be getting. There is a webpage that is supposed to list what's "Fresh this week" but they rarely kept it up to date. So I never knew what I'd be getting. Made it hard to plan my meals or know what else I needed to buy for the week.
Although they do allow add ons, without knowing what they're putting in there to begin with, adding on is difficult.
Little variation. When I was getting a mixed box, I seemed to get 5 bananas every week. That was fine until we learned that my daughter was allergic to bananas. Then they went straight in the trash. Nobody else here eats them. I switched to the all veggie box. That left me with avocados at least once a month. I was constantly giving those away because nobody here eats them.
Can not make changes to box. A few times I looked at the box in dismay because there was too much in it that we didn't like.

Thanks! I do have some apples. Seems everyone in the house is off fruit now. Just threw a bunch out. *sigh* I'm doing composed salad platters for tomorrow's dinner. I'll mix some of that with apple and give everyone a mound of it. Heh!

julie, there's a link to a thread for my celery root ravioli. the main subject of the thread is my herbs, but there's a pic and instructions for celery root ravioli. I like it way better than turnip!
yes, you need to peel it (and much goes to "waste"), yes you can just munch on it raw.
There's also a really nice recipe in Raw Food Real World for a soup involving celery root.
I love celery root!
Celery root remoulade is also very delicious, sort of like a coleslaw but with celery root!

Thanks! I don't think the piece I have is big enough to make ravioli, but I might make that next time.

I made this into a slaw by cutting the celery root into thin strips and doing the same to two apples. I mixed this with some lemon juice and a bit of salt. I found I needed to let it sit for a few minutes to allow the salt to sort of melt in and not give it such a salty taste. I like it. Daughter loves it. I think raisins would go well in here too.
