I wish I had a pic of this but I don't have a digital camera. And this isn't my idea. I saw it in a magazine.

Start with a fairly large apple. Slice the top off using zigzaging cuts like this:
/\/\/\/\/\/\

Then use an apple corer and remove the core, making sure not to ream it all the way through. You can use a small knife to enlarge the opening, or just use a knife to carve it out if you haven't a corer.

Then use a small knife to carve a face into it like you'd do a pumpkin.

Soak the apple and the top for about 10 minutes in a "fruit fresh" solution such as lemon juice and water to prevent browning.

Dry off the excess water.

Fill the cavity of the apple with raisins or other dried fruit or nuts.

Put the top back on and wrap tightly in plastic wrap to tuck into a lunch box.

I made one of these for my daughter's lunch yesterday and she requested another with a smile on it.

Jeez...many, many years ago when I was a Girl Scout we made 'Walking Salads', fruit salad inside a hollowed out apple....before saran wrap!! Adding a face to it is a great idea.
