View Full Version : Potato Knishes -help-having flashback attack

Any NYers here who know what a potato knish is? I grew up with them and right now at bedtime I am having a flashback attack. Any raw version you can assist with is appreciated. No eggs wanted here. I wonder for the flour if almond pulp will bind but maybe chia or flax seeds would do the job? Thanks.

I've eaten a few knishes, but never made them so I don't know what goes in them. But I do remember the filling seemed to be mashed potatoes. When I tried making potato chips (but failed), the thinly sliced and soaked in salt water potatoes seemed at about 1/2 hour in the dehydrator to have the soft, warm texture and flavor of mashed potatoes. When they were dehydrated longer they took on a raw flavor again.
