Raw Almond Pumpkin Seed Pate
Soak separately in large bowls for 8-10 hours, then drain:
2 cups pumpkin seeds
2 cups almonds
Cut into 2" pieces (small enough to get into the hopper of a Champion Juicer):
1 yam or sweet potato (peeled)
2 carrots
1 cup parsley
1 onion
2 celery stalks
Seasonings to add later:
1 T. Herbamere®
juice of 3 small lemons
3 cloves garlic, crushed
meatless chick seasoning to taste
Instructions:
Using a Champion juicer with blank (instead of screen), run all ingredients thoroughly through except the seasonings.
Add all remaining ingredients to mixing bowl. Mix well. Form into desired shape on serving platter and garnish with almonds and greens. Can also be used as a spread for sandwiches.

Pumpkin Seed Cheese (Raw)
INGREDIENTS
2 cups sunflower seeds
1 cup pignoli nuts
1 inch / 2.5 cm piece ginger, peeled
2 cloves garlic
1 t dried oregano
1/4 cup fresh basil
Braggs to taste
METHOD
Combine all in a blender with enough water to cover. Start blender, adding more water to produce a very thick creamy liquid. Pour into a sprout bag and squeeze out liquid. You are left with cheese.
The remaining liquid becomes a dressing with the addition of fresh minced herbs and a little more braggs amino. To thicken the dressing blend in some tahini.
NOTES
The yield varies, so double or triple the recipe to meet your needs. Use this cheese as stuffing for celery, mushrooms, cucumber boats, etc. If you have a small blender, cut recipe in half to accommodate its size. Make this into a sweet cheese by eliminating last five ingredients and adding dates with cinnamon instead.

veganforlife, I don't think those recipes would work with the pumpkin seeds that come out of people's pumpkins. When they come out of a pumpkin, they have a hard outer hull on them. The pumpkin seeds you buy in a store for those types of recipes are a different variety, grown from a different type of pumpkin that grows with hulless seeds inside.

GROW MORE PUMPKINS!!!!!!!!!!!!!!
They don't take up much space and they grow like a weed- we dumped a few into a small bed of dirt on the side of our house when carving last week and we already have a ton's of green pumpkin plants growing- you can have your very own pumpkin patch next year- very cost effective :p

I take the fresh pumpkin seeds (with the hard outer casing) and mix it in a bowl with agave nectar and salt. Then, I put it in the dehydrator at 105 degrees for several hours until they dry. THis is so yummy; a nice snack while watching a movie. :)
