Hi,

More nut questions. I soaked a bunch of almonds at the beginning of the week for 24 hrs. , drained them, then put them in the fridge. There's still a ton left. Are they still good? They taste find - sweet. Can I grind them and make them into nut butter. I want to make fudge for my niece but don't want to give her spoiled goods! How long will the last in the form of fudge.

Thanks so much. I'm a novice and don't want to feed my kids/niece spoiled food.

I have kept them for a week in the fridge but I kept them in water which I changed ever other day. Then I put them in the freezer and use them immediatly as almond milk.
I suggest that you do the same with what you have now and start again with fresh almonds for things that you need to have a shelf life.
