View Full Version : Just like Ritz crackers.

This recipe turned out so well I just wanted to share!

2 1/2 c. walnuts soaked 1 hr. or more
2 1/2 c. cubed zuccini
1/2 c. ground golden flax seed
1/4 c. hemp seed
2 t sea salt

Grind walnut in FP until they are in very small uniform pieces (cous cous looking) - transfer to bowl
Grind zuccini in FP until they are in very small uniform pieces - add to bowl
Add ground flax, hemp and salt. Blend well. Add enough water to make spreadable dough ( 1/2 to 1 cup)

Spread between 2 trays lined with teflex

Dehydrate - Flip - until crisp

Cut in to chips - flat bread or desired sizes.

They are wonderful! They taste just like a Ritz cracker.

Thanks Mindi for posting. Will be trying it too next time we run out of crackers (just made a full batch of onion bread AND Mel's onion bread version... Yum! Yum! Yum!) We just love crackers!!!!!

Are you near health food store? If they don't have them should be able to order in. You may give them a call as I prefer to buy local if possible saving on shipping too.

By the way, I didn't have help seeds either -- i replaced them with extra flax seeds.

I made these this weekend, minus the hemp seed, but replaced them with unhulled sesame seeds? Let me tell you - they are THE best crackers I have eaten.
Sad to say, I cannot eat the RAWvolution onion bread and Alissa's flax crackers are okay *ducks from flying objects*
But these are very crunchy and tasty! I spread them too thin, one of the sheets, the other was somewhat thicker and doesn't crumble as easily.
I will definitely be making these again! Thanks so much for sharing Mindi.
Any other recipes you wanna share, post 'em! That was sure a hit with me!

I made them too! I also used sesame seeds instead of hemp seeds since I didn't have any hemp seeds. They ARE good...a very nice basic cracker with a "familiar" flavor...wouldn't say just like Ritz, but I can see where they may have somewhat of a similar hint of flavor :)

Only thing, I screwed up and added too much salt. I thought they would need "a bit more" as many recipes seem to do - but apparently the recipe measurements were right on point even down the to the seasoning. So, they're a bit too salty, but next time I make them (and there WILL be a next time) I'll be sure to add the amount of salt the recipe called for.

I had some last night with some dehydrated jalapeno cheese (Alissa's recipe) and it was just like eating cheese-n-crackers...very tasty.

I added some other seasonings to mine and they're great! (I used onion powder, garlic powder and pasta seasoning)

I'm glad you liked them. They also make great pizza crusts! I put hummus, olives, sundried tomatos, bell pepper and basil on them.

Do you have a Wild Oats in your area? I was there last week, and there it was...like a shining ray of light in the store. A machine that grinds fresh, raw peanuts!! It was only 3.99 a lb. You just hold the container under the machine and turn it on and it grinds it right into the container. I'm going to have to go back and get more soon!! Its very yummy!!

I made these using almond pulp. It worked! I added a little onion and minced carrot too. Kids like them. And they are much drier -- crackly dry.

Also made the orginal receipe. Very good. But I can not figure out what to put on them -- so I opt for honey. Yum!

BDraw, the original ones are great with any nut cheese spread on or even almond butter or almond butter, honey (or agave) and bananas...the possibilities are endless because they are such a neutral-flavored cracker! :)

Made these yesterday. Sadly, I only had enough ingredients on hand to make 1/2 a batch. These are going to go fast! Delish! I will be making a full batch next weekend for sure. So light and delicate but full of flavor. Oh, by the way, I used sesame seeds in place of the hemp seeds.

nice and crunchy..and the nuts ground up make them seem flaky almost, like shortbread cookies, kind of crumbly, but not too much.

I am going to be making these a lot. I ate one this a.m. (just to see if they were dry enough LOL :p ) ad now..I want to eat more before I even finish my smoothie. :eek: I am going to see how different seasonings go with these, since I like the texture so much...

Not a big fan of dehydrated flat breads and crackers, but after making this recipe last night, this one is definitely a keeper. Oh, and your right, it does taste very similar to ritz crackers. Thanks for sharing ~ Cathy

I followed Rawkinloc's example and had them with honey. :D WOW!! It is that creamy unfiltered raw honey and is so-o-o-o-o yummmmmmmy!!! I am so excited to find a cracker that is so versatile and just plain good!

hmmm..red pepper ones do sound good..:)

Out of ALL my cracker recipies that I have tried and even all the bread recipies..... and I have tried MANY MANY M-A-N-Y...


These are the hands down best of them ALL!

They didn't ferment, eaither.

These crackers taste even better then Ritz. I had one this morning to see if they were crispy and how they tasted, and now I am addicted and that's saying something becuase deydrated foods and I never really got along, i always ended up with a nauseated tummy, LOL! Not with these.

I have these in the dehydrator right now. I've had a little sample and they taste great! They have somewhat of a buttery taste just like Ritz...haha

The only thing is I think I have to let mine dehydrate a little longer because they're still a little soft & chewy. Hopefully they'll get crunchier. :)

These are a great use for zucchini...I used the recipe in RFRW for Walnut/Hemp Seed Crackers...very similar. I have them in the dehydrator now. It made three trays. I left two as is and added cinnamon and maple to the third.....the batter was delicious...can't wait till they are done!!

After reading this thread I drove into town just to get zucchini! Probably not the wisest use of gas, but I have them in the dehydrator and I just flipped them. I know what I'm having for lunch tomorrow :D .

I made a double batch y/d will be done when I get home. I made 2 trays with raw honey and cinnamon and the house smelt great.

I made these with only 1 tsp of salt. I always use less salt then called for because I can add salt on the top if not salty enough. It's always hard to take away salt but easy to add it.

I used yellow squash peeled. 3 good sized ones. I dunno if that was the required amount. I didn't need to add water. Just let it mix well.

Also, I didn't grind up the flax..just threw it in there to make it easy on myself.

I poured the mixture in a bowl and decided to slice up some onions in the food processor and stir those in. Then I added the sliced onions to half the mixture in case I didn't like them.

I also added 2 tablespoons of honey to the mix.

And it DOES remind me of Ritz. I spread some avocado on it and it was delish. I almost gave up on dehydrated stuff because everything I was making was not tasting good to me.

I love the mix with the onions added. I have not tried the one without yet but I think I will always add onions. I just love 'em so much.

Now we will see if the child likes it. I doubt he will. He likes things simple. I think most kids do. I can hear him over there at the table Ohh and awwwing over this peach that he is eating..he is saying "this is SOOOO good"

Now I just have to try not to eat it all in one sitting.

Also, I wanted to mention. I spread it pretty thin. When ever I work with flax I like to get it dried up as soon as possible or it gets kinda funky tasting.

I dehydrated for 12 hours only and put in the fridge to avoid the flax ickies. I turned them halfway through and took off the teflex sheet. I think I must have been sleepwalking last night in order to turn them.

I just popped them into the dehydrator. One question: I didn't need to add any extra water at all. Actually, I didn't notice the line where it called for water. Have any of you noticed the zucchini adds enough water on its own? Love the idea of a pizza crust! Yummy! Will try that next time with different seasonings.

yes, I didn't have to add water either.

I didn't like it very much without the sliced onions in it. So my add would be: Sliced Onions and 2 tablespoons of honey.

I have to agree that these crackers are absolutely yummy! I ate 1/4 of them straight from the dehydrator. The only change I'll make in the future is to make it in my Blendtex so all is ground fine enough for my husband who refuses to wear his dentures. Many thanks for the recipe.

I was very pleased with this cracker. I put kale in my food processor, then dressed it up with a sauce and tomatoes and fashion, then with avocado made a sandwich. I was a pretty happy camper!

If you can't eat nuts, what would you substute for the walnuts? I can eat peanuts as they are legumes not nuts or would a seed be better since peanuts have such a distinct flavor?

I came across this post about a month ago and made them. They are delicious and are similar to a "Ritz" cracker.

I have had a hard time finding a dip or something to eat them with. So far nothing really hits the spot.

I made these last night and they're probably the best dehydrator crackers I've tried so far! I used half the salt called for and will cut it down to 3/4 tsp next time. A little too salty for my taste, especially since I've gone low to no-salt. Guess my taste buds have gotten really sensitive now! :D

I wonder how they would taste crumbled up on a salad??!! :)

The only thing that "scares" me is that although it's all healthy fat, you'd want to go easy on them if you're watching your waistline! :eek:
