View Full Version : Peppers--great harvest -dry, freeze or?

Got tons of peppers from the garden harvest. They are starting to turn soft. I know I can dry them. Would love to make dishes and freeze like I believe RP may do. I know I can use them in crackers, pizza, sauces, soups too, but figuring it would be nice to have "stuffed bell peppers" too. Any suggestions please. Thanks. Winter is here and I have a great stash of peppers and tomatoes to still deal with. The tomatoes I got ideas for, but the peppers aiming to find way to keep for bell peppers. All ears here. Thanks.

from a different angle ive been wanting to make a trail mix type food from dry vegis , say like tomato - pepper - sun seed - green bean - mushroom - etc - etc .

you could even spice say the seeds by getting them wet so seasonings / herbs would stick to make dif versions . like mexican spiced or italian , etc . so itd be like tacos or pizza etc . a raw + spicy snack food .

On a different note, I grew 2 red pepper plants in my garden this year. The peppers were plenitiful, but extremely small. Why? I would love to grow more next year, as red peppers are one of my favorite foods....I need them bigger and not the size of a....small apricot?? :o HELP....maybe for next year?

Crackers seem like a good idea. You know they seem to keep forever..........
