View Full Version : Raw Corn Fritters

2 cups ground almond meal (take 2 cups and grind up in food processor till fine)
1/4 cup ground pumpkin seeds
2 ears fresh corn
1/4 cup honey
2 tsp. onion powder
1/2 tsp. sea salt
1. Grind almonds and pumpkin seeds till fine.
2. Add remaining ingredients. Process till desired consistency that you choose.
3. Roll into balls or make patties.
4. Dehydrate for 2 hrs. at 135 degrees and then turn down to 108 degrees and dehydrate overnight till they are done the way you like them. I left them in till Noon on the next day.
5. Serve with honey drizzled on them.
Pretty tasty!

Here's a question. Are they mushy in the middle? Everything I've tried that is a bread type thing....I can't eat it because the mushy texture grosses me out. I have to make everything a thin cracker!! I LOVE hush puppies! These would be great...they sound great! I tried the corn bread recipe in Alissa's book and could not eat it....I don't like the mush. HELP! I had to throw out the whole recipe of cornbread...and it smelled so good....I was soooo disappointed! I guess I've just given up on any type of "bread". I would so love to hear the secret for making things...not mushy! Thanks for your help.

Hi Wendi,
These I made into patties about a 1/4 inch thick.
They are not mushy in the middle, I don't like that either!
Just dehydrate them longer if you want to.
Just know, which maybe you do, the thicker things are the longer to hydrate and can come out mushy if not!

Thanks Pansy! OK...so if I take all the recipes that I thought SMELLED great...and tried them again...I can just leave the bread in the dehydrator until it is "firm"? On another note, I tried Alissa's burger buns and they were too thick...but maybe make them alittle thinner and just dehydrate them alittle longer? I guess I'm afraid of the bread being toooo hard??? Whatcha think? Thanks for your help. I'm definitely giving this a try! I have chili in the fridge just waiting on a good corn fritter!! :D Thanks again!!

Honey is in the recipe and you can drizzle honey on them when done.

i couldn't remember if honey was in the recipe...
and i was looking for that type of thing, where when you break it open the corn is sweet inside..........
i don't know why i have this idea in my mind of a hush puppy look to it.
and then, inside whole kernels that are tender and sweet.........
must have had something like this somewhere,.
and the name of it -- what they called it, escapes me.............
