View Full Version : Bell peppers--storage ideas

I've got loads of bell peppers--too many to eat immediately.

How can I store them? I can dehydrate some for soup in pieces, but what about the rest--freeze? No way can I think of using them up right away either. Thinking nice for pates too but first I have to figure out how to preserve them. Thanks.

You can use some to make crackers.
I would freeze the rest in preferance to dehydrating.
I feel that they are better with their own magical water (even if it has been frozen) than with added water to rehydrate when you need to use them.

How interesting -- just yesterday, I wanted to post this exact question. I decided to freeze mine. I put them on a cookie sheet (deseed and cut in half). By now they should be frozen and ready for freezer bags.
