i actually used a version of pumpkin -- another variety in the squash family!1 but, any one will do!!
i used buttercup squash -- as it is a very large (size of a large pumpkin!!)
and cut up into sections --- used for various recipes, i.e... potato chips, soup, etc.
i first put the pumpkin in the juicer -- to puree it *(use a food processor or whatever your chop chop choice is!! :) )
add.......
1t-2 of the following spices....... cinnamon, pumpkin spice,
about 1/2 t nutmeg
about 1/4c of honey
you can also add some dates if you like or raisens........
add enough 'flour' (almond flour or whatever you choose) to get it to the right consistency for cookies
and dehydrate........
you can taste the dough --to see if you want to adjust the flavoring/spices
it was very yummy
i might also add some pecans -------that would be delicious!!!!!!!!!

Now, does "flour" mean almonds you grind into a meal, or is there srouting involved like with buckwheat?

it's just ground............ for example........ almonds ground into a flour substance

Awesome! I'm not too savvy with the whole sprouting thing yet so it's nice that almond meal is ok. I'm so gonna make this.
