IMRPROVISED A BIT....
USED MY FAMOUS SQUASH -- THAT WAS SOOOO BIG,.....STILL MAKING RECIPES OUT OF THEM!!!!!!!!!
it is a cross between butternut, pumpkin and spagetti.........
but is very versatile and has been used to make potato chips, spagetti, and sweetened like acorn squash.........
so i decided to use it to make pumpkin cookies..........
very easy...........
to puree it -- i simply put it through my juicer, that way the job is done for me!! the pulp side, pureed it!! and the juice i added back in.
i added cinnamon, ginger, pumpkin spice, honey, some raisen puree (liquid)
about 1/4 c honey
then mixed in your flour of choice...........
they are 'baking' as we speak!!!!!!!!!! smells YUMMY :p

Sounds great, thanks for sharing and can't wait to hear how they taste! And your idea to use the juicer for the squash is excellent, I am going to try that out.

i might add a bit more pumpkin spice, cinnamon, and possibly maple to it
i think i might add pecans as well
probably close to 1 tablespon of each spice
i think i added only 1/2 teaspoon
very delicious though
i think i may make them as muffins next time!!
i tried out only 2 as muffins, rest cookies!

Hi! To the woman who posted the improvised recipe about Pumpkin pie cookies, I wanted to ask what flour do you use? Can you grind up flax seed meal or almond meal instead?

yes.........use whatever flour you would like to!! i think anything would work
i think i just used flax meal, and almond meal............
it was yummy!!
use anything....
i used cashew meal in another recipe the other day!! (my brownies....)

I shaped my cookies like little flat pumpkins...sort of like a heart shape with a 'stem' on top, then made a face on them with dried cranberries, took them to a potluck, sort of like this! :)

that was just easier for me to grind up the pumpkin pulp
if you have a food processor or something like that, it will work just fine!!
i don't have a food processor, but my juicer pulverates the pulp, and that is what i needed for the recipe
it was very tasty........... add lots of pumpkin spice, cinnamon, and you can also add ginger etc...
also enough honey for taste

My daughters have Celiac Disease and I can only use buckwheat as my grain. Do you think the cookies will come out just as good? And what ratio of buckwheat do I use? Oh, and what is the ratio of squash?

it was probably about 2 cups of squash.......
i think any grain would work.
i would just taste .....after seasoning to make sure the taste is right for you
let me know how it comes out!!
i used buckwheat to make bagels, but preferreda spelt berries.... just a personal taste thing.......... i don't like the taste so much of buckwheat
but if you like it, certainly use it!! :)

Hey Sptygl,
Just got a slighly different version out of the dehydrator and THEY ARE YUM!
Here's what I used:
4 cups of butternut, grated in FP (to make it easier to mush)
1 cup raisins soaked for 2 hrs in juice of 1 orange
3 tbs honey
½ teaspoon nutmeg
½ teaspoon all spice
1 teaspoon cinnamon
Grounded pecan and cashew flour until reach desired consistency (I used about 1/2 cup)
Form into cookies. Dehydrate.
The dough was pretty wet but it made it super easy to shape into cookies.
They turned out delish!

OK, here goes... It was posted by RawGuru himself on the NFL forum...

Bagel Dough
1 cup 1 day sprouted kamut grains, dehydrated (8-10 hrs) then ground into fine powder
1 cup almond flour (soak almonds for 10 hrs, grind em up and dehydrate this mixture till super dry (10 hrs)
3 tbs. ground golden flax seeds
1 cup young coconut water and 1 tb. meat
5-7 dates (pitted) or 1 tb. honey
1 ts. olive or coconut oil
1 ts. celtic sea salt
Assembly
Put all the ingredients in the food processor and process untill well combined. Remove the dough and knead it a couple of times to make it more pliable, if too wet add more kamut flour, or ground flaxseeds.
Next. Put the dough in a non metal bowl and cover with plastic wrap or towel and let sit in the fridge for 1 hr.
After one hour, remove dough on a a clean surface and divide it to make 10 seperate balls. Take each ball, knead it a few times, and make into a bagel shape. Begin from the center and work outwards. The bagel should be no thicker than 2 inches. Take each bagel and press it into a topping (recipes below) and place on a deydrator sheet, dehydrate for 3-4 hrs. at 145 degrees (only in the excaliber at this temperature. All others at 110-115 degrees) or untill the top is crisp.
Cut each bagel with a serrated kife and if you like you can toast it up in the dehydrator for 10-15 mins. Take each bagel slice, slather it with chive cream cheese (recipe below) and some marinated tomatoes or thinly sliced cucumbers. and there you have it! This recipe is also great for making pretezels and other fun shapes.
You can also make a sweet dough by adding more dates, dried fruits, blueberries, apples, cinammon and raisons, nuts and seeds, carob chips or chocolate chips (home made of course), etc....
Toppings
Poppy seeds
black and white sesame seeds
garlic flavored sunflower seeds (soak sunflower seeds, drain roll em in some celtic sea salt, and garlic powder and dehydrate till crisp)
dried herbs
Optional: You can put some "carmelized" onions into the savory dough mixture.
Carmelized onions
1 red onion (sliced very thin)
2 tbs. honey or agave nectar
1/2 cup water
pinch of salt
Mix the water, honey, and salt. Put the sliced onions in there and marnate that overnight in the fridge. Place the onion slices on a dehydrator sheet and dehydrate it for 4 hrs. Remove and chop or leave whole.
Cream cheese
2 cups soaked cashews
1 tbs. rejuvelac
2 pinches of salt
pinch of cayenne (optional)
Blend up the nuts till creamy, mix in the rejuvelac and salt, and leave out for 10 hrs. at room temp. covered. After 10 hrs. place in the fridge to get more solid.
That's it! You can flavor this cream cheese with herbs, garlic, ginger, chives, dried fruit, honey, etc.... Serve it on bagles, crackers, breads, in salads...
