So I'm not one to call something a name that it's not, like lasagna if it's not really lasagna. I was in the mood for something chocolate-y today and was surfing the gliving site yesterday and found this recipe.

I can NOT believe how much it tastes like real, live, normal chocolate. A chocolate Easter bunny came to mind! It tastes alot like Hershey's or any chocolate that is not dark, the bitter taste isn't even there. (Although I do like dark too!)

Oh yes, and I don't know if it was because of the walnuts, but it tasted a teensy bit salty - and with the crunch of the walnuts it tasted EXACTLY, and I mean to the "T" like chocolate covered pretzels. YUM!!!!!!

I couldn't leave the batter alone - it is like a chocolate cake batter and takes like maybe 4 minutes tops to put it together. I LOVE RP's brownies but they are a little more tedious and the date taste is good, but I'm not a huge fan of dates.

I added coconut flakes from Alissa (like 1/2 cup), and a good bunch, maybe 1 1/2 cups of chopped walnuts. It is HEAVEN on a spoon! I thought to myself..."I can pass up ANY chocolate especially for Halloween and Christmas, knowing I have these at home!" It's elating to know I have a much yummier version plus it's healthy so I don't have to be "deprived" when everyone else is enjoying their holiday sweets.

I stuffed it with walnuts but it's such a versatile recipe, you could make a ton of different kinds of chocolates - like chocolate covered cherries would be yummy with this, if you had chocolate molds. My kids were ALL over this (7 & 4) and I only let them taste a little bit. :D

Except for the almond butter and vanilla, those are the ingredients I use when I make my chocolate covered nuts.

I found that cacao nibs and honey(you can probably put any other sweetner here) blended tastes sooooo yummy.

Sherah, baby number 6....wow and congratulations Sure wish I had more but back when they would say 2 C sections was enough. I listened then but wouldn't now.

That fudge is crazy good. Even SAD eaters I have offered it to have requested the recipe after one bite! yum yum

Just don't eat too much! I had some nice hefty helpings yesterday and regretted it - it's not really "food" so much as in, nourishing and replacing a meal. But perfect for cravings, for "dessert" after a meal, etc. I'm going to have more as soon as I'm done with my breakfast smoothie. :cool:

Ok, that looked so good that I had to run out and get the ingredients. I just got done making it and it is INCREDIBLE! It is honestly the best raw dessert I have tried so far. I sprinkled walnuts on top. Wow! Thanks for sharing the recipe.

Indulge
Organic Chilled Chocolated Fudge with Walnutes
(Raw)

Makes 8 Servings


This healthy treat is very versatile with different ingredients and measurements. Play around with it. You may prefer to try other butters with it like cashew or macadamia nut. Or leave out the coconut if you don't like the subtle coconut flavor. However I find the addition of the coconut butter to make it far lighter and creamier.


Instructions

To Start, In either a powerful blender or food processor, blend the cocoa beans until it becomes a soft fine powder.

Usually about 1-2 minutes. Then add to the blender the rest of the ingredients. Blend until it is well mixed like a thick cake batter.

Then pour the batter into a square cake pan (preferably glass). At this point you may wish to stir in additions to it like walnuts, dried fruits like cherries or mangos or dried coconut. Then cover it and put it in the freazer for about an hour to set.

Remove it from the freezer making sure it has been in long enough to become firm and hard. Cut it up into squares or any shape you wish. Transfer the pieces to a serving plate. They are now ready to indulge.

You can keep the plate in the freezer or the fridge depending on how hard you like it. I usually keep in the fridge. But it does need to stay cool or it will melt very quickly. Within about 20 minutes at room tempurture.

You could also use carob powder instead of the cocoa, but I haven't tried it. I like cocoa way better. You would need less sweetner though with carob because it is not bitter like cocoa is.

This recipe can also be adapted using less expensive ingredients like regular cocoa powder.

Ingredients

Chocolate Fudge


1/3-1/2 Cup
Raw Cocoa Beans (to taste)

1 Cup
Raw Almond Butter

4 Tablespoons
Virgin Coconut Butter

1/4-1/2 Cup
Agave Syrup (to taste)

1 teaspoon
Vanilla Extract or Vanilla Seeds

1/4 teaspoon (Optional)
Sea Salt

Options

1/2 Cup
Walnuts

1/3 Cup
Dried Coconut

That fudge is AWESOME !!!! :D :p :D

I made some earlier & it sure is a great treat. With all the Halloween candy in stores everywhere-it is nice to have something easy to make to curb the chocolate cravings.

I think I added too much agave or water (to help with the peanutbutter blending) because mine was more of a pudding.

I can't afford almond butter from the store. I think I'll try to make my own (almond butter) The only problem I see in that is that I usually use coconut oil to help blend up my nut "powder" to make the butter :( I'm hoping using just almond "powder" with the oils and other ingredients would make it like the fudge. I'll give it a try and let ya'll know. The photos looked soo great...like SAD fudge. OH yeah...I don't buy cocoa nibs either (way tooo expensive...so I use organic cocoa powder...just so ya'll know)
