Looking for some fresh ideas on raw winter recipes. Anyone out there have a favorite one???

I don't have any favorite winter meals. I eat the same way most of the year. I know winter makes me think more warming foods with chili or ginger ingredients. A chili dish may be very warming now if you are feeling the signs of winter too. I remember hearing of dishes with soaked lentils for chili--raw too.
Pizza, burgers, sound great now too. Winter robs my outdoor garden and I have to buy produce vs. grow own. Enjoy your food prep, beauty and results.

There is a GREAT raw chili recipe on this board....it doesn't use beans or anything sprouted so it's easy to make and eat immediately! I have SEVERAL SAD eatin friends who request this chili....it has great flavor! I don't have time to find the recipe right now, but if you can't find it let me know and I'll post if for you. I think it's called "chili no beans".

I love the chilli recipe on here. One of my fave fall recipes. Reminds me of when my mom would make chilli when it got cold!!

We grow most of our own veggies, so in winter, I start to switch from standard salads to salads made from root veggies, etc. This is also a great tip for anyone on a budget.
Grated beets
Grated carrots
finely grated fresh ginger
a little apple cider vinegar, hemp oil if desired, salt if you need it.
It is also delicious with grated apples, if you're not stressing about food combining.
BTW, that is also an excellent juice, beet-carrot-apple-ginger.
The other salad I like (though uses non-raw condiment) is just grated beets with a little balsamic vinegar. If you're trying to lose weight or cutting down on processed oils, it's nice because if you leave it to mellow, the vinegar loses its sharpness and it doesn't need any oil. It's also nice over spinach or some light greens, or on dehydrator-wilted marinated kale with a few pine nuts added.
For me, winter recipes means winter veggies, so fresh from our garden for the next month or so are pea shoots, kale, mache/corn salad, radicchio, cabbage, squash, parsnips, leeks, carrots, beets, red celery, fennel. Winter also means more sprouts for us as we start sprouting indoors when there's less pickins from the garden.

The chili recipe (link posted above) is just the best, I love eating it with Alissa's Onion Dip on top. Reminds me to make some this weekend!

Lucky you for growing your own veggies. I grow some but more coming next summer.
I bought lots of hard squash. Any suggestions on raw dishes for these????? Tehy are like bricks to work with as well.

carol, by hard squash do you mean a butternut type, or something that tastes similar? you can make pasta with a spiralizer. You can blend it into burgers and patties, or crackers, etc. You can even make sweeter "spice" cookies. I think Gabriel Cousens has a recipe for challah with butternut squash. You can also make a nice pie, sort of like a pumpkin pie.

If exurb sees this, I would like to know the recipe for the "squash" pie....it looks fab, and I've got a butternut squash sitting ready to eat!!

Wendi, thanks for your interest. I have to run now, but if you go back to that thread and look down further, I posted instructions for making the pie and an approximate recipe. (Unless it's been deleted due to my comment of that thread being like "food porn" being censored.)

Wendi, I had a chance to look, it is in that thread further down. I should have got a post # but just wanted to say the instructions are there.
I agree with the chili recipe posted above. Its delicious!!! I also love Chai almond milk or brazil nut milk, lightly warmed from the vitamix for chilly mornings.
