ive got a bunch of over ripe bananas i want to try freezing like i see people doing here for smoothies etc and im wondering do ya take the skin off or not .

Heck yeahhh! Then place in ziplock bag, squeeze air, wrap rest of bag tightly around and you are good to go.

Yes, I definately peel them first. Best results too for blending and making food processor ice creams is also to slice the bananas. I usually slice them, place them on sheets or cutting boards, freeze until solid, and then transfer to freezer bags and return them to the freezer.

Hey, I use food processor to make icecream for my kids (I have some too :) ). Their favourrites are raspberry-banana, blueberry-banana and three-layer version (I make red, blue and white icecream seperately, and put it in a container as to create three layers). I think durian and mango are also good candidates for icecream creations.

I have frozen some bananas recently and left the peel on...and then as I am peeling off the frozen peel with a sharp knife while my hands are freezing I began thinking to myself "there has to be a better way"!!! some of the most obvious things dont occur to me!!! :rolleyes:

Here's how I very quickly freeze banannas.
Put the banannas you want to freeze on the counter.
Open a zip lock gallon freezer bag.
Peel the whole bananna into the bag, don't bother to slice them.
When the bag is about 3/4 full, press the air out of the bag and then seal it with the whole, unsliced banannas in there.
Now, with the blunt end of a butter knife, slice the bananas into one or two inch pieces thru the plastic. This is much easier then it sounds, LOL.
I have found that pressing the banannas to slice them thru the bag saves time and messes.
Don't use a sharp knife or the bag will get sliced, too.
label and freeze. The bananna pieces will be easy to make into ice cream, ect.
I have used this method many times, and it never fails and is the simplest , fastest way to get those nannas frozen!

The best ice cream in the world is persimmon! Even better than banana, and I didn't think that was possible! :)

Thanks Nora for the tip! My kids do not like persimmons as much as I do (I am a persimmon fanatic), so maybe me making persimmon icecream for them would convert them. :p
