View Full Version : Raw Pumpkin- question?

I decided to be creative today and indulge in somethimg very Fall Like :D
I wanted to make Pumpkin, date pecan cookies or a bar of some kind.
Have the pumpkin home now- have blisters from trying to cut and peel just half of it. It does not smell very fragrant or sweet ? Should it? or is it not ripe? I have it soaking with the dates in filtered water to see if it will soften- before I go to all of the mess and trouble to make these and dehydrate them- should I toss the possibly unripe pumpkin- any advice? :confused: Let me know what you think!

would love to know myself. I bought a pumpkin the other day, but have been at a loss as to what to do with it.

I know....I am afraid that they will either not be edible or it will give my whole family a really bad tummy ache? Hmmm....Hopefully someone will know soon! I will check back later-have a GREAT day!

Hi Guys, I just recently made the pumpkin pie recipe out of Alissa book and it was really good. I m not sure what size pumpkins you have I actually bought one of the small pie pumpkins I peeled it (skin's a little tough) and then shredded it in the food processor and then added the other ingredients. Also i just cut the pumkin ip in small slices and just add it to my salads. I hope that this helps. Let me know how the cookie/bar making goes. Take Care

Lay Lay and Karenbeel,
My impatience got the best of me...so, I followed the recipe that I had created and cannot stop eating the dough/batter for the cookie/bars- It is heavenly!
1/2 of small pie pumpkin (size of cantaloupe)
1 1/2 cups pitted dates
(Soaked the above together for 2 hours)
2 tsp pumpkin pie spice- McCormick brand (ya...I know probally not totally raw)
1 1/2 cups of pecans
2 TBSP Agave Nectar
Processed in the food processor and I am currently spooning them on the teflex to dehydrate--but, cannot stop eating the mix- it is so yummy- may mix some with oat graots- and make a granola to have with almond milk!

Oooooo Yum, faithfullyfit that sounds sooooo good. I know when I was making the pie I was doing the exact same thing just couldn't keep from eating the batter. I'm glad though that you just jumped right in and made the recipe and decided not to wait for a reply to your post. Let us know how they turn out and also the granola sounds yummy!!!!!!

These would be great with a few cranberries in them- they are so rich that the tartness might be a nice balance.....hmmmm?
I will let you know how they turn out!
