I recently got Nomi Shanon's "Raw Gourmet" from the library and I wanted to try her "Yam and Apple-Stuffed Mushrooms" recipe which she happens to recommend for Thanksgiving. (Great timing! :) ) I thought this would be the perfect opportunity to invite our friends over and prepare them a little raw feast. As they are used to SAD, I don't want to test their tastebuds too much so I thought that maybe having a bunch of little appetizers might be the way to go.
Here's what I'm thinking of making (so far!!!) Some of these recipes I haven't tried yet though so any feedback would be appreciated! :confused:
-the Boutenkos' Borscht (?) or Nomi Shannon's Winter Squash Soup (?)
-Nomi's Yam and Apple-Stuffed Mushrooms (?)
-Nomi's Festive Stuffed Mushrooms with Cranberries (?)
-Boutenkos Thai Cucumber Salad (I just love this!)
-Spring green salad
-Mini-pizzas using Mel's onion bread version and eggplant as crusts:
-w/ Alissa's spinach dip, nut cheese, and marinated veggies
-w/ nut cheese and Alissa's marinara
-Nut spread (any suggestion?) and crackers
-And either Rhio's Celestial Pecan Pie with fresh strawberries (http://www.live-food.com/food/whattomake/celestial_pecan_pie.html)
or Butter Pecan Ice Cream on straberries (haven't tried it yet but will be a sure hit from the raving reviews! ;) )
I know my menu isn't very traditional but, oh well!
What are you guys making for Thanksgiving?
And speaking of thanks... This site has made all the difference for me and Don and I can't tell you how much I appreciate your invaluable support, info and yummy recipes!:)
