View Full Version : Just Like Pesto!!!

i just made this last night....wow...it tastes just like 'real' pesto

ok in a food processor, combine:
1 avocado
2 heaped teaspoons of tahini (raw)
the juice of 1 lemon
a little bit of water (just a tiny bit to make it process better)
a bunch of parsley
a bunch of basil (be generous)
a little bit of dill weed
2 cloves of garlic
some celtic sea salt (i put more salt then i usually do for my recipies)

it really does taste like pesto...i was so surprised
i had it as a salad dressing on greens, but i was thinking it would be killer on top of soaked wild rice...i'll let you guys know how that one is as soon as i try it :)

Yummy sounding. I make alot of pestos, and have never yet put in avocado and tahini. I will try this out soon!

i have always made pesto from pine nuts, parsley, basil, garlic, and olive oil. sometimes a little lemon. you can change it up and omit the pinenuts and basil and use cilantro instead. mmmmmmmmm

Amethyst Rain. I use different herbs with different extras. Olive oil, salt, lemon juice and garlic is my usual with any herbs.

With cilantro, I like to throw in some jalapenoes and/or ginger.

With mint, I like ginger (just a small slice) and some parsley.

With basil, I like pine nuts.

With parsley and or dill, I like bell peppers and garlic.

cool, thanx guys :) i've never found pine-nuts anywhere in the city, so i'm gonna have to get some from the net...it just gets expensive after a while :)

Yes, pine nuts are expensive.
I love pesto with an apple.
