if i can substitute almonds for cashews in a recipe?
I had the last of my bag of cashews last night but i have lots of almonds, i don't know if it will make a big difference or not.
It is not a dessert recipe it was a the recipe that Doe posted for an omlette, so if you can help me please do. :)
I also have some pinenuts, could i use these mixed with almonds?

It may depend on the recipe. Cashews are soft and give a very creamy consistency. Macadamias are a better substitute, but if you only have almonds, you can try blanching them first.

could you tell me how do i blance them without destroying the enzymes?

You can briefly soak them in hot water by using a metal sieve. Place the nuts in the sieve and then dip the sieve in the hot water for 20 seconds or so. Then immediately in a bowl of ice water. This should just heat the surface, or the skin and then they should be able to be pinched off easily.

If you don't have a metal sieve, you could probably use a nut bag, stocking, etc.
