View Full Version : What is your favorite recipe using dried coconut?

I bought some organic dried coconut today, finely grated, and wondered what types of recipes everyone uses this ingredient in? I am thinking a dessert truffle or something like this but am open to all ideas! And why did I buy it? It just looked so white and fluffy and dessert-like I just couldn't resist!

(I do have most every raw food book so a reference to a book would also be great!)

I am not one for having much patience, so my dessert here in front of me is BUTT UGLY, but it is wonderful. I put a small handful of the coconut in a bowl, a drop of mint extract, raw cocoa, a small handful of raw almonds and a dollop of agave. I put it in the food processor for a bit and BOOM!!! Almond Joy!!! It is so yummy!!!

Just last night I used it in a cheesecake recipe - split the mixture in half and made 1/2 coconut and the other half chocolate with a pecan/raisin crust. I was going to make it like a marble cheesecake, but ended up just making 2 layers. Mmmmm! I also like it in smoothies.

I have not used dried coconut yet. I have used baby thai and fresh but neverr dry. I'm sure my time to use it will come soon.

I just ate so much of plain coconut flakes with agave. very good, but it didn't feel like a real dessert, so I just ate and ate... I didn't make it an experience, it was more of a late night... thing. I would in the future try and make something with a little bit more variation in flavor

Raw food real world macaroons are amazing. Except they have maple syrup in them, which is not raw. You could try substituting agave and maybe some maple extract or whatever, which isn't raw; but it's raw-er than maple syrup. I made it with the syrup because I still have some from my last master cleanse.

There is a recipe for a carob cake with dessicated coconut in Leslie Kenton's 'raw energy' book, which I make quite a lot even when not trying to be raw.

This is a bit of an approximation - I use 2 or 3 apples and chuck everything else in to taste.
blend in the following order:

Sunflower seeds
2 or 3 apples
dessicated coconut
carob powder
allspice and vanilla essence to taste.

add a little banana to get it to a soft squidgy consistency.
add raisins or dates if you want it to be sweeter (to taste)

Tip mixture onto a board and make into a square cake shape, about 2 inches high. Sprinkle dessicated coconut on the top, and refrigerate to firm up slightly. Cut into smaller squares to serve, and try not to eat all at once! To me, the apples make this cake taste quite 'creamy' and I use lots of carob so it's quite dark and intense :D

Sharon, those vanilla rings, they look almost exactly like some danish christmas cookies with vanilla taste.. Awesome!

Hi Alba! This is a bit emberrasing, only NOW do I see your post as I searching for Christmas Cokkies again.. Yes, it is vaniliekranse I am thinking about and I am quite danish too! Where do you know them from?

One of my personal favorite coconut recipes are Maraw's Lemon Chewies and Chocolate Chewies...the longest they've lasted in this house is 3 days! :p

I really like Renee's Caramel Coconut cookies...

RL’s Caramel Coconut cookies

3 C dried shredded coconuts
1 C soaked/pitted dates
3 Tb almond butter
2 Tb honey or maple syrup
2 Tb olive oil or coconut butter
1 Tb vanilla extract
1 Tb cinnamon
2 tsp nutmeg
pinch of sea salt

Blend in food processor.

Take approx. 1 1/2 half Tb of the dough and press it on a teflex sheet with the bottom of a wet drinking glass

Dehydrate at 100-105 for approx. 12 hours on each side. Dehydrate it enough that the inside is moist.

Revell’s Notes: O.kayyyy, new batch in the dehydrator (well, SOME of it got to the dehydrator ). Left out the oil and salt, and cut the nutmeg down to 1/4 tsp. Added about 1/4 C. soaked raisins. They are LUSCIOUS!
