I'm so excited to be trying out all of the amazing recipes in Alissa's book and just improvising my own recipes and the ones I find here. Here is what I had to eat today (because I'm just feeling particularly inspired):
A green smoothie made with: cantaloup and leafy greens (chinese type, not sure what the name is)
Collard leaves filled with a nacho cheese and cucumbers. This is the most amazing tasting thing I've made in the last while! I pretty much improvised on the nacho cheese, but I used the recipes from Alissa's book as a guide. Then I sliced some cucumbers length-wise to make it easier to stuff the collard leaves. Then I took 3 big collard leaves and filled them with the nacho cheese and some cucumber and ate it! So delicious!
I need to mention that this is the first time I made any "cheeses" because I never really liked "cheese" (the traditional kind) so I was never attracted to those recipes before. But now that I've tasted this "fake cheese" I think it can really outbeat any "real cheese"! Thanks Alissa! :) I now have a fun new "filler" for wraps, to use as a dip or to smother my veggies in!
Then a fresh nectarine. Yumm! Now I'm dehydrating Alissa's tortilla wraps and I'm going to fill them with some other fresh veggies once they firm up a bit.
My question is, what do you really love to make and love to eat? It can be any recipe, even if it's really simple! :p
