Hey everyone!

I wanted to know how these big raw companies make their ice cream that looks like it could be scooped out of the carton just like SAD ice cream?! I was on that website www.oneluckyduck.com and their ice cream looks amazing! Now I've tried the banana ice cream and it's good, but it gets boring and I've tried making ice cream with cashews and it just tastes funky to me. Their website says their ice cream leaves no funny aftertaste of nondairy ice creams. Is that what I am tasting. Does anyone know their secret? Is it in their book Raw Food Real World? I do have a Champion juicer that makes banana ice cream in a snap. Any insight would be appreciated!!

TRy making yours from half bananas and half frozen almond milk and you will not get the banana taste from it.
I make wlanut icecream and love it. I have tried other nuts and did not like them.
I make chocolate, strawberry and blueberry and think they are great and much nicer than what I remember of SAD (many years ago) and way way nicer than vegan ice cream from the health food shop.

I have been inquiring about ice cream too. I had the most amazing ice at Pure Food and Wine last week and have been searching for a recipe. Here is one that someone pinged over to me BUT I have not tried it yet. If you try it before I do please let me know how it comes out.

Vanilla Ice Cream (serves 6 to 8)

2cups RAW Cashews, soaked 4 hours or more
2 cups coconut meat (I presume it is Thai, baby coconut)
1 cup filtered water
1 cup agave nectar
1/4 cup coconut butter
2 tablespoons vanilla extract
Seeds of 1/2 vanilla bean, or 2 additional teaspoons vanilla extract
1/2 teaspoon sea salt

In a Vita-Mix or high-speed blender, blend all the ingredients until completely smooth. Chill thoroughly in the refrigerator and then process in an ice cream maker according to the manufacturer's instructions.

I checked out this recipe, just wondering...Do you have to freeze the ice cream or use an ice cream maker, or just eat after mixing?? Thanks-I don't have a champion with a blank plate or homogenizer so just looking for the best ice cream recipe to make without it-and want a recipe my SAD eating family will like too.

I just mix it all up in the food processor...it takes a little while for me to get all the chunks of banana blended up. I think some people might add a little bit of water so that it processes better?
I usually just eat it right after I make it, usually it dosn't even make it into a bowl :p . You can freeze it too if you want firmer ice cream, if you eat it directly after making it, its more like soft-serve.

Hope that helped!

The line is from Gandi (I think) and the reason that I posted about the walnut ice-cream is because not all nuts make nice ice-cream but some do.
I just put a fistfull of walnuts in the food processer and process well. Then I add a dash of agave and some frozen bananas.

It is a special ice cream machine they use at Pure Food and Wine. Next time you go get a kitchen tour and they will show you! It just gives it that amazing texture!
