View Full Version : Could anyone tell me, what could i use as a thickener for a vegetable pie?

:) I juiced some corn and mixed it with chopped tomatoes, some seasoning and chopped avocado.
It is jelling somewhat because of the corn juice but not getting as firm as i would like, so can anyone think of what i can mix into it to make it thicken up.

It tastes really delicious, just doesn't hold together.

do you have any psyllium husks or psyllium husk powder.

I grind the husks until EXTREMELY fine in the coffee grinder. Usually a teaspoon or so will really help things gel.

there are other options, but to me the psyllium is the most effective.

Cashews.

Just grind in a coffee grinder until smooth then stir in. Alternatively, use any liquids from the pie to blend with the cashews until smooth and stir in with veggies. Cashews thicken the longer they sit. Also this makes it creamy.

I heard agar agar is a good thickener, but haven't tried it yet. The suggestions already made all sound pretty good and would add a creaminess maybe reminiscent of ala king style. Thought maybe finely ground golden flax seed, but would leave a nutty taste in the dish.

Let us know what you end up trying and the results. Would also love your recipe--veggie pie sounds fantastic.
