Okay, so, I'm eating the Eggplant Bacon I dehydrated overnight, and I put Nutritional Yeast flakes on them(I dipped them in actually:)) and OMG!! It tasted JUST LIKE NACHO CHEESE DORITOS!!!

Eggplant Bacon

Peel eggplant, use veggie peeler for thin strips, I don't use skin but it's your call. Marinate eggplant in 1/2c olive oil, 4T. Ume Plum Vinegar, 2T Honey and 1t. of Cayenne. Marinate for 2 hrs and dehydrate overnight. It's really spicy, sweet and greasy, then dip em in the yeast flakes..........and ENJOY!!!! :p

yumm! We have serious eggplants in our garden right now, so it's nice to have more ideas for them!

therawdeal- it's umeboshe plum vinegar, a strong tasting vinegar with a good ph balance often used in gourmet raw recipes. I get mine from the co-op I order from, so I expect that you can probably get it at most health food stores, and surely at an asian market. You can also get Umboshe plum paste, it's a yummy addition to nori wrap patés. :D

Thanks misslinda... This is a good idea. I'd forgotten all about the eggplant bacon craze that happened quite a while ago here, LOL. I never did try it... Maybe I'll give it a go... I have quite a list of recipes to try though, LOL.

I was just craving Doritos recently. I'ma think about trying this. I wonder if the toaster oven will work. I can't find nutrional yeast anywhere though....

i was just thinking i needed something like this, and then voila...here it is. i just bought 2 eggplants and i have all the other ingredients, must be destiny...i'll let you know how they turn out!

I soaked mine in the marinade, They tasted perfect.

The texture was crunchy.................
But i put in container too soon & they got soft

Sounds wonderful and thanks for sharing recipe. I love greasy food, but fool my mind and say I don't. I was thinking maybe less olive oil would make it less greasy then? I have agave and may give that a "sweet" try instead of honey.

My husband was going to use the eggplant in refrigerator last night and he forgot. I now have an opportunity to make this. I can't wait over night, so it will be a teaser, to what it could taste like if I would let it do its thing overnight. I may try this today or get more eggplant for another time. Gotta see if I have ume around.

flashback: I used to this in rice balls during my macro days to keep the food fresh--it's the salt in it that is the key. It is made out of apricots. Oh, when Kushi came to CO I took a class in making this. A long time ago and one time only...........

I got my nutritional yeast at the local food co-op/health food store. You might try there in their bulk food section. Or, perhaps they would order it for you if you asked them to.
