I need help on fancy desserts

It's not a real emergency like i need it today but does anyone have any recipes for desserts served in hotels or upscaled us dineing rooms?
I am asking because an anniversary is coming up for a very special couple and they are raw vegan.
So, please if you can help me i would really, really appreciate it. :)
