I am about to make Alissa's marina recipe. Can anyone tell me how many servings this recipe will produce, and how long the sauce might last in the fridge?

Servings? It depends, how much sauce you like. I'd say no more then 3 days - 4 max in the fridge. These are fresh ingredients.

I usually just make enough for me, and that recipe looks like more than I'd need...but I didn't want to reduce it.

I'm guessing it makes about a quart. I go through it quickly every time I make it...

you can always freeze your leftovers, it's a great timesaver to have some waiting for you when you need it :)

I've not been one to freeze things much but maybe I'll start incorporating it. heh heh, I wouldn't have even have thought of it had you not mentioned it. Seems like time is moving so much faster nowadays and I keep running out of it!! It would be nice to have something very quick and easy that's a bit more than fruit or a smoothie sometimes.

I thought freezing can destroy as much as half the nutrients, no????????

here's my opinion... just my opinion, so anyone is welcome to disagree... on freezing...

Some plants can freeze, some bugs freeze, even human embryos freeze and come back to life when they thaw. Perhaps there might be some compromising of your nutrients when you freeze, but it's no where near as bad as when you heat, and if it takes a lot of stress out of your life to help you stay raw because you can make bigger batches of stuff and take it out of the freezer when you're in a hurry and don't have time to start from scratch, then I would say don't stress it.

Optimally... yes, you want fresh, I wouldn't resort to eating all my stuff frozen but it's a tool to help us stay raw, make life easier, and keep from wasting.
