View Full Version : I just purchased a bunch of large carrots.

:) Outside of juicing them, how can i use them for a meal, i can't afford to waste them and would like to know how i could use them in a recipe.
Also i've heard that if you are trying to lose weight you should limit the amount of carrot juice you drink, what do you all think?

As for the weight thing in juicing carrots, I have read that with fasting it is possible to not lose weight if you get enough calories from your juice so I can see how that could happen with lots of carrot juice since they have a lot of sugar. I would see how you deal with it and then adjust afterwards by cutting back or upping exercise if you really like your carrot juice.
I usually am satisfied with one carrot-orange drink a day though.

Another idea is to make a nut pate and just spread a thin layer of the pate in the bottom of a red pepper half, then fill the rest of the pepper with shredded or just chopped carrots. I prefer the chopped as I like the crunch, but the shredded works just as well taste wise. I just throw sunflower seeds, a touch of salt, some soaked sundried tomatos that I've drained, a touch of oil, and some herbs in the food processor to make my pate. Hmmm... quick, good and easy :)
A great side dish is Carrot Raisin Salad.
Just great carrots and add raisins, pineapple, pineapple juice, and a little honey or agave.

I love carrot juice!!!
It is my breakfast ^_^ Two glasses in the mornings.
And when I drink it, I lose weight O_O Down to 115lbs. It fills me up in the mornings.

I make a carrot curry soup by blending celery, carrots, onion, red pepper, 1 tomato, and a couple tablespoons of curry. I eat this nearly every day. Makes a great meal!

My husband likes carrot apple salad. Grate some carrots and apples together and he makes dressing of lemon juice and honey or agave.
