use or avoid???

I'm in the process of attempting to make bacon -- I admit -- I know nothing about eggplant ------------- so, what do I do when I get to the seed part while slicing?

would someone please provide a link to the dehydrated eggplant recipe? i have a few eggplants in my fridge i need to use.

I made these last night, using 1/4 cup oil and ACV. I also blotted off excess oil with paper towels before drying. Today they are ready. They look semi-like bacon. I do not care for them. But, I have to tell you -- my kids tasted them, without me telling them what they were or what they are suppose to taste like. One thought it tasted like a peach ????? The other said jerky. They both approved. Hm-m-m-m-m.

Oh, and I avoided the seed part. I have three eggplants left, trying to figure out if I'm brave enough to try making more, with another flavor.
