Hello all!

I hope you're all feelin grrrrrreat this fine day!

I just picked up a few avacados and was wondering how everyone likes them prepared. I've been craving them for so long and FINALLY got them.

Amethyst, can you please put your recipe here? I remember it sounding soooo good!

How about the corn chowder in Alissa's book. It is really good and the taste of avacado comes through really well.

I love to sprinkle black pepper on them, and scoop out of the shell with a spoon, right into my mouth. I also throw in some soups in the food processor, with any vegetable I have in the frig. Guacamole is a favorite.

Oh wow...I learned this from Alissa.....

The BEST way to eat an avocado is sliced, squeeze a lime over the top and add sea salt. It "tastes" like you're sitting on a mexican beach, for some reason (I know that sentence doesn't make sense...but that's what it tastes like to me!)

2 avocado's diced
2 cups tomatillos, chopped
2 T fresh basil, minced
2 T lime juice
1 1/2 T fresh ginger, minced
1 T garlic, minced
1/2 tsp. Celtic salt

Pulse chop in food processor with "S" blade everything but the avocados and basil.

Then pour into mixing bowl and add the avocados and basil.

* I like to add lots of cilantro to the recipe!

You can chill it 1 hour to thicken before serving - but it's tasty right away.

I make little wraps with
Alissa's mock salmon pate,
the tomatillo avocado salsa
chopped tomatoes,
chopped olives
sliced avocados, or guacomole

This is my favorite Raw meal.
and the salsa makes it alive and tangy.

hey, sorry for the late response :) ok this is what i usually do:

for salad dressing:
either mash avocado in bowl with fork or do everything in the VitaMix...avocado, the juice of one lemon...2 cloves of garlic (really garlicky) some celtic sea salt, some fresh ground pepper...Voila!!!...you can add other things to it...tumeric, cumin, basil, parsley

the other thing i usually do for a quick avocado meal:
cut up avocado in smallish pieces and place on a plate
cut up a tomato or red or orange or yellow bellpepper into smallish pieces and place on same plate opposite avocado slices
put some black sun-dried olives in the middle...Voila!!!

or:
do the same thing as above with avocado and/or tomato/bellpepper
put a little mountain of soaked sesame seeds in the middle
make a 'dipping sauce' out of lemon or lime juice, garlic, celtic sea salt, pepper and parsley...with a fork, dip the avocado slices into the sauce, then dip into the sesame seeds and eat...eat the tomato right after when you still have some avocado sesame in your mouth...:) hmmmmmmmm

I mash it up and add a tomato and chopped cucumber and wrap it up in a lettuce leaf.
Also, a slice of avocado and 1/2 date wrapped in a kale leaf. DELISH!!!

Catherinethegreat I really gotta try your recipe...sounds awesome..I love tangy. And Amethyst....I love sesame seeds with a passion! I gotta get more avo's now! I also love really spicy..not the regular super mild spicy that people say is hot but when you try it, it feels like a wet match on your tongue (temperature wise), but the spicy that bites back as soon as you take a bite.
Mmmmm raw habanero peppers....those would be good with avocados as well...

I use an avocado pate when I ever I make sushi consisting of guacamole, ground up cauliflower, grated horseradish, meyer lemon juice, and cayenne pepper. I've been experimenting lately with pates made with avocado and this is the one that I made today.

Ekko- I really enjoyed the Mousse of the Gods recipe. It was so good! It tasted so close to the real thing it was scary! I also like the Raw Chili recipe-

I make Mock Egg Salad, with nice pickles, and celery and mustard, honey, pepper, sage.............. I have had it three days in a row now. Its awesome on some greens.

This is one of my favs, simple but yummy.

I mash up an avo then mix in chopped onion, chopped tomato, fresh minced basil and a pinch of sea salt. then i plop it over sliced cukes and instant YUM!

Sometimes I even add a smidge of cold pressed olive oil for that extra pizzaz.

:rolleyes: I love sliced avacado on toasted whole grain bread or bavarian brown bread.

I toast the bread so it's real crunchy, crush one garlic clove, divide and smear on toast, then top with sliced avacado.......REally good!!!!! :D :cool:

Sprinkle some of Alissa's Dressing on a light bed of lettuce Slice a tomatoe, lay it on the lettuce. Sprinkle sea salt, black pepper, garlic powder, and onion powder on the tomatoe. Slice avacado and place slices on the tomatoe. Sprinkle with curry powder and cayenne pepper.
ENJOY!! There is something about the combination of avos and tomatoes!

I love eating it with mariated kale salad:

1 Large bunch kale, stems removed and cut into thin strips
1/4 Medium sweet onion, sliced paper-thin
1 Avocado, cubed
optional: 4 Shitake mushrooms

Marinade:
3/4 Cup Olive oil
1/4 Cup Lemon juice
1 t Celtic Sea Salt
1 clove Garlic, thinly sliced
1/4 teaspoon Cayenne pepper
optioal: Herbs of your choice

Place everything but the avocado in a big bowl and begin to masssage and squeeze. Keep this up for several minutes until the texture changes. Add avocado and enjoy!

My favorite way to eat the avocados is to top a Rye Bagel (form Alissa's book), spread on some cashew cheese (cashews, water, Nama Shoyu), top with slices of tomato and avocado! So yummy I ate it for lunch and dinner two days in a row :D

I like making nori rolls with slices of avocado, cucumber, red bell pepper, carrot, and sprouts with some wasabi and namu shoyu. Or, if I don't have any nori (as I didn't today), I just chop all that up and have it as a salad.

Alyssa's Avocado Cups (p.294) are soooooooooooo yummy! They have tang (lemon or apple cider vinegar), zing (cayanne), and so many colors! I love it!

Wow it is great to see so many uses for avocados here! I also put them in my smoothie if I want it to have a silky texture. I have made pudding with them .. it is such an odd thing if you know there is avocados in the pudding :) but they lend a wonderful texture. The lemon pudding is fantastic, but do as Alyssa suggests and close your eyes when eating .. green pudding messes with my brain! :eek: I just had a thought: LIME pudding! Then the color would complement the taste quite nicely. Can't wait to try it!! :p

I love that, but I usually roll the slices in poppy seeds for some crunch before I put the lime juice and salt on!
