I bought some gooseberries at TRader Joes and they have been languishing on my shelf.
They taste really bitter and I am not sure what to do with them.
Any ideas?

Are they fresh? Or dried? Not sure I've ever heard of dried ones. As a kid, my best friend had a bush or two in her garden. Her mom used them to make some sort of jam out of them. My friend and I used to torture ourselves by eating one of the berries on occasion. I don't remember them being bitter, although they might have been. They were very sour though. So much so that it was hard to swallow even one of them.
I've seen recipes for pies, compotes, jams and the like. Not raw recipes, but they're all highly sweetened. I think you could probably sub them in for any fruit in any recipes you have, but add a lot more sweetener.
