View Full Version : Ideas for dates.

I need some ideas for dates. I have a ton of them. I'd been making RP's brownies and everyone loved them. I then modified the recipe adding coconut, coconut oil, more cocoa, more nuts and a bit of water. Rolled them in balls and more coconut and called them fudge balls. Everyone loved those too but then suddenly we all got sick of them.

The problem is, nobody in this family is too keen on sweet tasting foods. We must be weird or something. I just threw away a ton of fruit that spoiled before anyone ate it. I get organic produce boxes each week and they almost always contain some fruit. The farm I get them from does not have all veggie boxes like the other farm I used to use. I do like that this farm allows me to modify the box somewhat, but most weeks I still get some fruit whether I want it or not. It's still cheaper for me to throw the stuff out than for me to buy the stuff at the grocery store.

So... While we were all in a fudge ball frenzy, I went looking for more dates. The health food store where I shop only had those bits that are rolled in oats. So I asked about getting some whole raw ones. They ordered them for me. In the meantime, I found some on sale elsewhere and bought them. Then when the dates came in at the health food store I bought those too, simply because they go out of their way to accomodate me. It's a small store and they have limited space.

But now this last batch of fudge balls is just sitting there and nobody wants any more of them. And I am stuck with a ton of dates. Nobody here will eat them as is. When my daughter was small, she'd eat them stuffed with nut butter but she got burned out on those really quickly and won't touch them now. They're just too darned sweet!

Does anyone have a recipe for them that will make something that is not overly sweet? I don't do smoothies. Daughter will drink some on occasion but not likely with dates in them. And she can't have bananas due to a food allergy so mainly I make hers with frozen berries and rice milk (not raw). She hates nut milk.

If you've not gotten it, I'd suggest you get Jennifer Cornbleet's book ~ Raw Food Made Easy for 1 or 2 People. It's got LOTS of recipes utilizing dates. She only uses a blender and food processor, no dehydrator.

Any book that has a pie crust in it ~ you can make cookies or balls with. You use dates to sweeten tomatoe sauces as well. Alissa has quite a few in her book.

You could incorporate chopped dates into Alissa's Nut Brittle recipe (p. 510)

I don't think I have that particular book, but I will look for it. Stuff like cookies, balls or pie won't get eaten here. We just don't care for that stuff. I do like the lemon chews, but I make them with more lemon and less sweetener.

Haven't made the tomato sauce because I don't know what I'd put it on. Zucchini noodles don't sound good to me. I don't like raw zucchini. But thanks! If anything the tomato sauce would be my best bet. Just not sure what I'd do with it.

But that's a sweet and as I said, we don't care for sweet stuff in this house. Perhaps the dates are a lost cause because they are by nature so sweet.

You can stuff a date with a walnut, that might cut down the sweetness.

Or just use it as a general sweetener for dressings, nut milks, smoothies, etc. instead of honey or agave nectar.

Before you let them go bad (maybe as a last resort) you could make fudgeballs, or brownies and freeze them to take to family gatherings....since everyone (even SAD eaters) seem to like them!?? Good luck. I love dates.

BTW, how many DO you have?

Nobody would eat it with a nut stuffed in. Like I said, I used to fill them with nut butter for my daughter but she got sick of them after the first couple of times.

We don't use dressings, don't make nut milks, don't do smoothies, don't use honey, and very rarely agave nectar, and when I do use it, it's a lot less than what the recipe calls for. Thanks for the suggestions though!

No. Nobody eats those things any more and my mom specifically asked me not to bring those things to family gatherings any more. Seriously, our family does not like sweets and we just don't eat much of them. Like I said, the fugde balls are just sitting there and nobody wants them. I made the brownies like 3 times and we all got burned out on them right away. No freezer space for stuff like that either. I think I have 4 bags of them. Maybe 6.

I wish I lived a bit closer to you (I'm across the water in Poulsbo). I'd just buy them from you because I use tons of dates and our local Central Market hasn't restocked them in their bulk foods department for several months now. I'm getting desperate and am about ready to just order some online as there are no other sources for them here in Kitsap County!

Sorry no good suggestions, but just had to vent about my "date-less" situation!

Did I miss it and you don't dehydrate? The holidays are coming and you could dehydrate them for holiday recipes. I also note that someone on there posted a really awsome recipe for Italian "meatballs", again, dehydrator...sorry? Those with the tomato sauce are high on my list to try out right away!
My partner's italian, we'd eat tomato sauce on darned near anything! ;)

keep in mind I am new to this dehydrating thing...maybe you can't dehydrate them? Any experts in the house with a dehydrator?

Give me an idea of what things your family eats on a regular basis. I have a couple books and I have started experimenting so I'd love to give it a whirl.

I'd suggest eggplant crust pizza but I dehydrate the eggplant crust.

My husband is Italian but he hates Italian food, particularly tomato sauce. I did see the meatball recipe. Perhaps I will try that one day. I do have a dehydrator.

I really can't give sweet of any kind (raw or otherwise) for the holidays because almost everyone in my family and my friends have some sort of health problem that prevents them from eating such stuff, or we just plain don't like them. I don't know anyone personally who likes dates. I only bought them to use in RP's brownies and then the modified fudge ball recipe. Although my family does like them, my mom said for some reason they made her very ill. And my dad has no self control when it comes to sweets. He was recently diagnosed with diabetes. Here in this house, sweets just don't get eaten. Yes, we might eat some for the first day or two but after that they just sit until they go bad and then I throw them out. So I usually just don't make them.

I don't think dehydrating these dates would help me because I belive they are already dried. I suppose I could be wrong but they do appear to be dried. And even when they are dehydrated at home, they still require refrigeration.

I'm not much of a pizza lover. And I don't care for eggplant. Mainly I eat plain stuff. Pumpkin seeds for breakfast. Cut up raw veggies for lunch. Salad for dinner. Stuff like that. I'm not much into things with sauces or dressings. I do like the onion bread and I like sandwiches made with that, lettuce, tomato and Swiss nut cheese.

Husband and daughter are not raw, but they will eat some raw stuff. Daughter has a ton of food allergies so she is really limited as to what she will eat. Husband is a lost cause food wise. He loves junk, junk and more junk. If he thinks the food is healthy, he won't eat it.

I have been buying raw pumpkinseed bars by Go Raw at my health food store. Daughter and I both like those. They're slightly sweet and chewy but to me they give you the feeling of eating a meal and not a sweet like a dessert. I'm pretty sure they have dates in them but I don't have a recipe to make them. I've tried other bars with dates in them and they're just waaaay too sweet for my liking.

No, wouldn't do that. I'd sooner throw them out. Too much trouble to run an ad and I can't imagine that anyone would even respond to it since they are so readily available. I suppose I could donate them to a local food drive since I think they would be considered non-perishable.

There's a Central Market here and they've been out of sunflower seeds for a long time. Or the raw ones anyway. They do have roasted. My best friend (who is no longer with us) used to run movies over to Poulso every few weeks to some theater there. Don't know anyone else at the moment who goes over there or I would send them to you.

Jicama Date canapes is really good

Peel 1 large jicama (a little over a pound)

Cut a half a cup into 1/4 inch dices and the rest into 1/4 inch thick slices

Pulse about 1/2 pound of date to a paste

Put date paste in a bowl

Stir about 1/2 cup diced Jicama , 3 tablespoons of lime juice, 2 tablespoons minced scallions, a little fresh mint and a little sea salt.

Mix all together and chill

With the thick slices of jicama wrap them in damp paper towels and chill them is a seal in a plastic bag.

After all chills top the mixture with the thick slices of jicama and garnish with mint.

Serves 40-50 (for a little different taste you could add some cinnamon if you wanna but it doesn't nee it)

Not sure where I got this recipe. I have adjusted ot to my taste. I know it wasn't from a raw book.

Hi, I have a big bag of Celtic salt, and I want some ideas for recipes, but I don't want anything that tastes salty.

Thoroughly rub it in your skin from head to toe until your skin is extremely red & irritated. This is actually referred to as a "glow" by some. That's why it's called a salt glow.

If you don't like that idea, pour all the salt into a vase and use it to anchor dry twigs.

If you don't like that idea, throw it over your left and right shoulder every single day. Something will happen to you, maybe good, maybe bad.

If you don't like that idea, stir about 3 tablespoons in a cup of warm water and drink it first thing in the morning. Stay by the toilet because an explosion is sure to happen.

If you don't like that idea, donate it to a soup kitchen and write it off on next years' taxes.

pit them and freeze them, eventually someone will want something sweet, or you can take to pot lucks, but you do add them to spaghetti sauces, and that isn't sweet, you can add them to all kinds of sauces and crackers, and you don't have to add enough to make it sweet, just to take the edge off the sour or bitter or salty flavor of the foods.

anyway, I'd just freeze them, and if you have fruit spoiling, you can freeze it also, dehydrate or take to the food bank, and give to the needy.

Freezing isn't an option because we have a stupid old side by side and the freezer portion is very small. Hubby insists on having the freezer filled with ice cream, fruit pops, etc. There's very little of what I'd call "real" food in there. So if I can't find a way to use them, I guess I'll just donate them. I don't think there's any danger of them going bad right away.

I agree with Sharon, you asked for ideas, got lots .....soooo many great ideas but you don't seem to like many, do you even like the dates ???

I would freeze fruit and dates before I would throw out, or give away to someone who also may throw out. (unless you don't like and will not buy again). I find if I cut up my fruit and place in baggies they fit somewhere in the stuffed freezer ! and dates can be pureed, sliced and thrown in a baggie for the day when you say.. Oh I wish I had some dates. Hubbie should not have total control of the fridge, its a partnership even when it comes to freezer space IMO. :p

I use frozen (because it was going bad) fruit in my ice creams. A few frozen pieces of fruit can really cut the sweetness of a banana ice cream, and dates are great in the crust of a banan ice cream pie.

I make it with 6 dates a few cups of almonds and cacoa and press in a pan, cut before it is totally frozen for easy removal later. My SAD husband (Italian) LOVES IT ! I made on two days ago and alas there are two slices left.

No, I don't like dates. There will never be a day when I say that I want dates. Nobody in this house will. We're just not big fruit eaters. And I did start out my post by saying I didn't want a recipe for sweets because we don't eat sweets. I'm allergic to almonds and my daughter is allergic to bananas, so any recipe with those in it is out.

Yes, I know we may be weird, but we simply do not do dessert type things. I wasn't raised to eat desserts and I don't personally feel they're necessary. Not ever. I don't care if it's a holiday or what. I just don't feel the need for them. So those types of recipes are of no use to me.

My daughter does eat occasional sweets, but really just occasional and I only make them for her if she is invited to some sort of event that includes a dessert, like a birthday party. The reason I make it for her is due to her various food allergies, there is no dessert she can eat, aside from the rare all fruit sorbet or fruit juice frozen treat that we can find ready made. My mom does get that sort of stuff for her for family birthdays, but if there needs to be a cake or something, it's up to me to make it for her.

I have been asked specifically by my mom not to bring any raw sweets over to their house any more. For some reason she got very sick when she ate RP's brownies and the amended recipe for the fudge balls. And my dad lost control when eating them. So I can't make those things for family events.

I can pretty well guarantee you that if I were to find a way to put the dates in the freezer, they would not get used again. Stuff that goes in my freezer is usually forgotten about unless it's something I bought specifically for something like the strawberries or the bread for my daughter. Unlike some people here on this forum, I have no problems with throwing food away when I don't want it. Of course if I know someone who will use it, I will give it to them. But I don't know anyone personally who eats dates.

The only reason I bought more of them was that the brownies and fudge balls were being eaten like mad when I first made them. But now, nobody wants them any more. I originally made RP's brownies for the 4th of July after my daughter pitched a fit when my mom requested that no desserts be brought. My daughter felt that since it was a holiday we needed something special. My extended family is not one who has any sort of traditions when it comes to holidays and for the most part we do not do any special foods. In fact we're almost sort of anti-holiday when it comes to some holidays, serving foods that you wouldn't associate with holiday foods. This is no biggie to me because it was always this way in my house.

I decided to try the brownie recipe and told my mom about it, not knowing how she would take it. She doesn't always take stuff like this well. She is very touchy about such things, but to my surprise she told me to go ahead and bring it. I didn't think anyone would like it or even try it but they all said they would when I said there was no sugar in it. For some reason, my family seems to regard white sugar as poison, although they'll happily glub down stuff sweetened with honey, fructose or other sweeteners thinking somehow they are eating something healthy. Whatever... At any rate, the fact that it went over so well made me think they were going to eat it often.

I also am trying to increase the amount of coconut oil in my diet and making the fudge balls was one way of doing it. I enjoyed them for the first two or three batches and then I didn't want any more and apparently neither did the rest of my family because they are still sitting there in the fridge.

Now it's possible with the holidays coming up that my husband may need some sort of potluck dish to take to work. However, he is in the military and in recent years, they've been cracking down on the sweets and junk food in his particular unit. Last Christmas they requested that no sweets of any kind be brought in. I sent in a raw veggie platter. That's the sort of stuff they wanted.

LMSSSAO!!!! Too funny!

O.k., send me the dates. I'll give them to the sheepies. They LOVE dates. Makes their fur loverly. And if they get tired of them I'll give them to the camels. Makes them spit better.

Revvell

Do sheep really love dates? Hmmm... I didn't know this. I live in farm country. Perhaps there's a farmer around here who wants them. Don't think I've seen any sheep, but there are horses. Used to be llamas over by my dad's house but I don't think they're there any more.

Ah, well. I thought perhaps there was some recipe I was missing. I do love those Go Raw pumpkinseed bars and I know they have dates in them, and perhaps some flax. I haven't any at the moment. Health food store was out of them. And I've yet to see any recipe for them.

I'm thinking you could just mix up some dates (like in the food processor), add some pumpkins seeds and anything else that might be tasty (nuts? sunflower seeds? coconut flakes? look at the ingredient list on one of the storebought bars or something similar) until it looks tasty. Take it out of whatever you mix it in and flatten it out and cut it into bars. Voila! You've got pumpkin seed bars! Experiment with whatever it is you do like and see what happens - you might just find a combo that the whole family likes.....

I was just afraid to try that because so far so much of what I've dehyrdated (and these bars are dehydrated I think) has not gone well. It just annoys me when I waste all that time only to have something not be good.

Freezing isn't an option because we have a stupid old side by side and the freezer portion is very small. Hubby insists on having the freezer filled with ice cream, fruit pops, etc. There's very little of what I'd call "real" food in there.

No, we don't eat many sweets, ro fruit for that matter. I did start the thread out by saying I didn't want a recipe for sweets. My daughter and I both love the raw pumkinseed bars from Go Raw. I know they have dates in them, but they don't taste overly sweet. I've also bought some kind of pumkinseed snack with dates in it that she likes, but I haven't tried it. I thought perhaps there were some other ideas out there aside from sweets. Obviously people are making this stuff, but it seems nobody has an actual recipe. I don't want to try fiddling around with my own recipe because so far most of my dehydrating experiences have not been good ones.

If that's the feedback your getting then assess your output. Really, can "everyone" all be wrong at the same time? Maybe/Maybe Not.

I guess because instead of saying "thanks, sounds like a GREAT idea..any more ideas out there" the response is, "thanks, but no" or "that wouldn't work for me" which comes across a little offensive to those who spent time trying to help. I know you did not mean to sound that way, but it does come across as negative. People are just trying to help.

Imagine taking the time to try and help someone, whether you are typing out a very long recipe, or even making some suggestions hoping that this person might be able to use them and actually like them, but instead your idea is shot down.

Not that you should lie and say everything is perfect, but the lack of appreciation for the tons of suggestions offered here might just come across in a negative way, even though your responses are just being honest and explanatory. Maybe a little too explanatory. But that is your nature and what makes you, you - and it is a good thing. Just channelling it correctly is the key.

But, then again, what do I know. Heaven knows I have a gadgillion shortcomings!

There's really no way around the fact that dates are inherently sweet.

I agree with the majority here. Give the dates away to someone who will use/enjoy them, and be grateful you had the opportunity to do a good deed for someone else.

how about granola?

2 cups each of flax, buckwheat groats, sesame seed, pumpkin seeds, and sunflower seeds soaked overnight.

Add 2 cups pureed dates, 2 cups of walnut pieces, 1 cup of shredded coconut, one cup of raisins, 1/2 tbsp of cinnamin, 1tsp nutmeg, and if you like, choose an undried fruit..strawberries, peach, apples, and puree enough to mix in to give it a more fruity flavor.

Mix all together and dehydrate 12-24 hours.

It's not particularly sweet, I would add some agave or more dates as I like it sweeter...but it will keep for a good long time so you can make a lot, and can be used as a snack as it is or a cereal with almond milk.

edit: these can also be used to make bars with

Awww hey Julie..

I'm sorry you feel badly. This medium, little black letters on a white screen, is not the best avenue for conveying thoughts and feelings. Often, things are written and the meaning is misconstrued by the reader, who takes offense or feels hurt, when there really was no intent for that to happen. We are all individuals and we all have different ways of expressing ourselves, different senses of humor, and we are all at different levels of development in all the myriad aspects of our psychology and humanity.

Please don't let anything said by people here curtail your participation or enjoyment of this venue. First, you are giving them a power over you that they should not have, secondly, the odds are that while personalities clash at times on forums like these, no one usually ever means to hurt someones feelings or make them feel bad and it's a shame when it happens....but the people involved usually never dreamed that their words would elicit such a reaction. Additonally, EVERYONE has something to offer, regardless of how much or how little each of us may value it at the time, based on where we are individually, and I've found that the silencing of any voice takes much away from the orchestra, as it were.

I hope you will reconsider your decision..

Hmm Julie, what DO you all eat then? Just greens and vegetables? I'm sure you won't read this since you said you won't post on here much anymore :(, but you can't get around it...dates are sweetners and whatever you put them in will become sweet. I don't like recipies or sweets anymore either. I never was a dessert person growing up...I don't see the point. I used to DOWN dates by themselves, but then I got off them and they sicken me haha. I have some "sweet" stuff after dinner now that I'm raw. Usually an orange or peach or something.

The quote about some reason your family things sugar is poison...was that a joke? I SURE hope so.

If you can afford to just throw them away, why not just send them for the cost of shipping to someone who really could use them. I'm sure Cinnamon or someone would be willing to send you the cost of shipping, and you can get a priority mail flat rate box free from the post office. Just toss them in and have it posted. Since they're dried you really don't have to do any special packaging of them.

Or how about freecycling them. The ad is free for the posting, and I bet you'd be surprised at how many responses you got.

Please don't throw them away. :(

One more comment in this thread. As some of you may or may not know, I have several different medical problems at at the moment some that have yet to be sorted out. I have not been feeling well, have been put on a new med as of last night that is causing me to feel like I've been hit by a truck. And was taken off of another med because it was thought perhaps to be part of my problems (rapidly dropping BP). And now I am swelling up like a stuck pig which is why I was put on that med to begin with.

This past week has been brutal for me with too much I've had to do each day, then taking a bad fall and being bruised all over. I am disabled so it is hard enough for me just to walk short distances and I've really had to do more this week than I'm physically capable. So when I see someone posting about my shipping the dates, it gives me more stress because it is difficult for me to get to the post office to even mail anything. One Dr. thinks I might be having gallbladder problems, another is telling me it might be something called vasovgal near syncope, a type of heart problem. So I'm likely looking at more specialists, perhaps going to the hospital. I just don't know. The raw diet does seem to be helping but also new problems have cropped up.

These dates were not expensive. I don't recall the price I paid for them. The health food store where I shop has very good prices and I know the others I bought were on sale for a good price which is the only reason I bought extra. I don't have a lot of money as some have implied. In fact my kitchen still has no lights in it or electricity in one half because we've had too many other emergencies crop up that took the money I had intended for an electrician. I really don't want to get into all this stuff because I really *am* trying to focus on positive things.

As for my husband, he and I do not get along but for the moment I am stuck here, partly because of my health problems. My meds alone would cost me more than I make in a month if I had to pay for them out of pocket. I have insurance through my husband who is in the military, but if I divorce him I will lose the insurance after a year and although I *could* get medicaid through disability, that is next to worthless. Of course there is a lot more to this and it's not something I want to get into on a public forum. So for now I am making the best of the situation. As for the freezer space, he can have it. I don't care. In all my 47 years on this planet I've had little use for freezers aside from storing some blue ice and one really bad time in my life where I was very broke and had to make a pot of spaghetti stretch out for a month. I did freeze that into little containers. But normally I prefer fresh foods such as vegetables, sprouts and nuts/seeds. That is the bulk of my diet.

Hopefully that answered any questions asked of me here. Now I'm going to attempt to go answer one other question I saw on this board that I think I can answer and then go crawl back in bed because the dizziness is starting again and just staying upright in this chair is a chore.
